After being pretty much sedentary all weekend I thought I might have a hard time getting up this morning and getting my workout in but I bounced out of the bed this morning actually excited to get going!
This morning I did my weight circuit and finished it off with cardio intervals. I love doing a full body weight circuit it gets your heart rate up and you can feel the burn. Plus it is short and sweet and doing it in the morning stokes my metabolism for the rest of the day and gives me great energy..love it! I need the energy this week my schedule is a crazy one!
It was a cool morning today with a definite feel of fall in the air. So I made some fall inspired oats!
This combo was sooo good! I decided to put my banana as a topping instead of cooking into the oats today.
I loved taking a spoonful of banana, walnuts, coconut and chia seeds all at once…very tasty! I also drizzled it all with a little pure maple syrup and had a little scoop of Almond Butter on my spoon to stir in as I mixed everything together. Loved, loved this breakie and it kept me full until 10 o’clock.
Before my meeting this morning I had a some Greek Yogurt.
I topped it with some very sweet strawberries and a sprinkle of trail mix I had in my desk.
Plus just a tiny drizzle of honey. Yummy!
This kept me going until 12:30 and thank goodness because my meeting went way longer than it was suppose to. By time I got out I was starving and cold! They keep our meeting rooms to the likeness of a deep freeze….Burrrr!
Today for lunch I had leftovers from my supper last night. My Eggplant Stir-fry.
This was even better today since the flavours got to meld a little.
I also had a fuzzy kiwi. Since I started eating them like this I really do like the chewiness of the skin. Plus it is so easy to just slice it without having to take the skin off.
I had a very nice warm cup of green tea to have along with my lunch since I was an ice cube I needed something to thaw me out!
I also brought two Super Charge Me Cookies for dessert!
I only ate one after lunch and kept the other one for later.
I also did a little reading while I was enjoying my lunch.
The new issue of Cooking Light with the new look! I really like it! This is a great issue and there are a few recipes that I would like to try out.
Tonight we are playing hosts to my in-laws. They had some appointments in Calgary so they are staying with us for the night.
So I decided to make something for dinner that everyone would like…PASTA! Hello carb coma! HA!
I made a meat sauce with extra lean ground beef added some sautéed cremini mushrooms and a jar of Organic Pasta sauce. It was rich, meaty and delicious. I served this with whole grain pasta and a little stir fried zucchini.
I also topped mine with fresh Parmesan Reggiano cheese…I love this cheese for pasta. Rich and a bit salty. You don’t need much of it to get the full flavour.
Of course you cannot have spaghetti without the garlic bread!
This meal was filling and delicious. It has been awhile since we have had spaghetti.
When I arrived home from work we got a little package we have been waiting for! I can’t believe that in a month and a half I will be going to see……….

We purchased VIP tickets for their 360 Degree tour in Vancouver on October 28th. With the VIP tickets we attend a VIP party before the concert where we get food and drinks…so awesome!! Plus our names get thrown into a draw to get a back stage tour! We are so hoping we win that!! If I met Bono I think I would die! ACK!
We are making a mini vacation out of it. We will be spending Oct 27 to 31 in Vancouver it is going to be a great time and I cannot wait! You can bet I will be blogging all the action during our trip. So excited for this trip!
But right now I have an early morning so I better get my butt to bed!

That is actually a bowl shaped like a cup. Believe it or not I got it at Safeway for like 2 bucks!
