A comfort food kind of day

When I got up this morning my tummy starting rumbling right away!  Since my exercise has been minimal this week I decided I would try and not go to calorie dense for breakfast. 

Green Monsters seem to give me that great boost of energy so I blended one up!

I made this one with the usual of 1 scoop of Amazing Meal, 1/2 banana, 1 cup Almond Breeze unsweetened, 2 handfuls of spinach, ice and 1 tbs of flax seed…delish!

I also had a slice of toast with a small dollop of pb and jam…was craving it just a little! :)

The greek yogurt I made last night made an appearance for my morning snack topped with blueberries, walnuts and a drizzle of honey.

Work sure has been busy this week!  It was lunchtime before I knew it!  I was looking forward to my lunch today because I was having one of my fav yummy veggie sandwiches!

I really love these sandwiches and could probably eat one everyday but that would make for boring food blogging!

On a whole wheat sandwich thin I put avocado, Laughing cow cheese, spinach, cucumber, tomato and leftover sweet potato chips!  Mmmmm…so good!  I had one of my sunny peaches and a few red pepper strips along with it.

Tonight for supper I made one of my favourite comfort foods Tuna Noodle Casserole.  I found a really good recipe for it a few years ago in a cookbook called Lickety Split Meals and now it is one of my staple recipes and it is very simple to make and so delicious!

There are just a few ingredients

you basically throw them all together in a casserole dish, give it a mix

and put it in the oven for 50 minutes and you have a quick and yummy meal!

I also made broccoli and garlic bread to have with it.  I like to spice mine up with Frank’s Red Hot sauce! Really good!

Right now my hubby is putting together a package I picked up tonight…I will share what it is tomorrow! ;)
