It seems like everyday I have posted this week I am complaining about the snow we have been getting but this morning was the WORST! My drive to work took 2 1/2 hours! Just crazy!
I wanted to get on the road really early so I left the house at 6:30 am and took my breakfast with me…I should have taken something I could have eaten in the car but I did not.
I just made it to work at 9am when I was due to go into a conference call. I only had time to take a much needed washroom break! I was grumpy and starving!
It was 10 am by time my meeting finished and boy oh boy was I hungry. I had brought along oatmeal for my breakie…I quickly made it up and gobbled it down! No time for pictures sorry!
But my lunch was a little more relaxed!
I brought leftovers from last nights supper and it was delish!
I enjoyed it while I read on of my favourite magazines.
I love Clean Eating magazine and love reading the 2 week of meals plans they have. I think I may just give the meal plan a try one of these days for fun!
This afternoon a co-worker surprised me with some Starbucks love!
A Skinny Caramel Latte…it was so good! Just what I needed as a pick me up on this chilly and snowy day!
Not pictured was my afternoon snack of a crispy and very juicy Honey Crisp apple.
Thankfully my drive home was A LOT better as the snow stopped and started to melt! I used a good amount of windshield washer fluid on the way home. By tomorrow it should almost all be gone as it is suppose to get pretty warm.
Supper tonight was Greek themed. I followed this recipe for Greek-style Baked Pork Chops.
I got my ingredients ready and assembled first…I like to be organized makes things go quicker!
Put the topping and they went in the oven to bake.
It turned out really good! I loved the greek flavours of the feta, lemon and kalamata olives. Plus the chops were nice and moist.
I served it along with brussel sprouts and a new grain for me…Millet! The millet was pretty good with a mild flavour. The texture kind of reminded me of mashed potatoes. However, it dries out pretty quickly, so I think more sauce would have been good on it.
I have a day off from work tomorrow to take J to an appointment. It is going to be a long day.
But tomorrow night the hubs and I are going to the Rocky Mountain Wine and Food Festival!

Plans for this evening are to chill out with hubs and watch Biggest Loser!
