Artichoke Salsa

Ok, I have had this recipe a few times now and I just had to share it because it is so darn good.  Even the hubby likes it! I got the recipe out of one of my favorite magazines Oxygen.


I love adding flavour to my food without adding all the extra calories.  This salsa does the trick!  You can have it with homemade pita chips or use it as a topper for grilled chicken, salmon or even on a baked sweet potato.

I made another batch this weekend and we managed to gobble it up in 2 days!


Artichoke Salsa


2 cups of marinated artichoke hearts, drained and chopped
3 Roma or plum tomatoes, chopped (I use Roma and remove the seeds)
2 tbsp red onion diced
1/4 cup of black olives, diced (I like to use Kalmata olives)
1 clove of garlic minced
1 tbsp of small capers
2 tbsp of fresh basil chopped (I LOVE basil so I am usually generous with this)
Sea salt and cracked black pepper to taste


1. In a medium bowl, mix together all the ingredients.

2. Serve chilled or at room temperature.


I like serving it at room temperature.  I let it sit for about a 1/2 hour or so to let all the flavours meld together!

This salsa is so delicious and full of FLAVOUR and good things for you too!  Try it you will LOVE it!  I promise!

For supper that night we used it to put on top of our grilled shrimp.
