Good Morning!
I have a busy day ahead….I am going to take a short run this morning, I have an appointment to get my hair trimmed and my highlights refreshed and somewhere in there a trip to Costco!
This morning I had a very ripe banana that needed to be used up so I made J and I some Banana French Toast for breakfast.
Before I got to work I had my morning ritual of a large glass of water with a big wedge of squeezed lemon.
I then proceeded to making the French Toast while I had J hovering around my legs looking for his eats!
I combined 1 egg, about 3 egg whites, 1 mashed banana, a splash of Almond Breeze, cinnamon and flax seed together in a shallow square pan. I like using this for dipping the bread lots of room.

Into the pan to nice a golden brown. It smelled so yummy!
I made myself my favourite coffee
It is a blend from Second Cup. It is organic and fair trade and so very good. I love the mellow and nutty flavour of this coffee. It is the best when made in the French Press.
I topped my french toast with some warmed frozen raspberries and a dollop of plain yogurt
I also had a little dish of pure maple syrup for dipping
Well I better get my butt in gear if I want to get my run in before I need to get to the salon!
