Cauliflower Crust Pizza

Happy-Friday

It was another just fly by the seat of my pants kind of day.  NO school for Jaxin = a do whatever you feel like kind of day.  I like these kind of days!

I did get up early though to get my workout done.  Instead of 5:30am I got up at 5:45am instead.

I am loving these Complex workouts!  This one kicks my butt!  The skier swings at the end of the circuit are killer.  Again I thought I would try using 20lb dumbbells with this workout and again I had to go down to 15lbs after the first round.  I thought because my cold was almost gone that I could push my strength and do it but it is still too heavy!  I will get there one of these days!

After my workout I downed a cold post workout shake and then hit the shower.  I was ready to go at 7:15am as the boys were waking up! 

BREAKFAST

Today I got fancy!

A protein pancake.  I topped it with banana, blueberries and a drizzle of maple syrup.  I also had a cup of coffee.

Not sure what I did but this pancake was so good today…perfect texture and fluffy!

After breakfast the boys and I packed up and got out.  It was another gorgeous day in Calgary and I wanted to be out and about.  First stop was to get Jaxin’s hair cut.  He was pretty excited to go actually so cute.

We also hit up the farmers market for a few things. 

Cauliflower
butternut squash
Spaghetti squash
red peppers
beets (for roasting)
Homemade pizza for the freezer

LUNCH

I got inspired today!  I love me some pizza but I wanted something clean that tasted good and after a little searching I came across a recipe and I went with it.

I got the inspiration from Kasey and her blog Powercakes.

CAUILFLOWER CRUST PIZZA

This is what she calls a PowerMeal and I can see why!

So this is how it comes together..

The crust:

1 cup cauliflower stemmed and chopped
1 whole egg
4 egg whites
2 TB of coconut flour
I used sea salt, pepper and Italian herbs for the seasoning of the crust

Pulverize the cauliflower in a food processor until it reaches a rice like consistency, dump into a bowl and then mix all the crust ingredients together;
then you roll out the “dough” (fyi: it won’t be very “doughy” like a regular pizza dough) you have to shape it into a round shape.
bake at 425 for 20 minutes between two pieces of parchment paper.

After it is baked, I removed it from the parchment paper and  I topped it with a little tomato sauce I threw together of;

2 TB of tomato paste
1/4 cup of your favourite tomato sauce
2 TB of nutritional yeast

Then I piled on a whole bunch of veggies!

red onion
zucchini
spinach
grape tomatoes
sliced Kalamata Olives
Feta Cheese

Then it went back into the oven for about 8 minutes so the veggies could get warm and the cheese could slightly melt.

Then it was time to taste…

OMG!!  So darn good!  Really…really…good!  LOVE this!  I was not sure about the cauliflower crust but I am game to try anything at least once and I am glad that I did.  I will definitely make this again for sure!  Maybe even play around with it a little bit in the future and put the Sheri stamp on it!

I inhaled my lunch along with a side of Kombucha tea.

This time I tried the Multigreen..it was ok.  My favourite is still the Gingerade!

Since my lunch was pretty late supper was kind of a just pick at this and that kind of night.  The reason being is a had a pedicure appointment booked for 6pm.  So I popped one of the pizza’s I got at the market in the oven for my boys and I headed off to my appointment.

My feet are looking pretty once again.

OPI – it is called Pepe’s Purple Passion.  I love it…has little gold flecks in it too.

When I got home I did have one piece of the pizza as that was all that was left…I am also enjoying a glass of wine as one of my weekend PI’s (planned indulgence)

Today was much better I managed to get in at least two litres maybe more.  Trying to make sure I drink lots.

WRAP UP

Tomorrow I am going to a Cancer Fundraiser with my friend Nancy.  We have gone every year for probably the last 6 years or so.  It is a fundraiser for Breast Cancer such a great cause!  It is a lovely afternoon of a fashion show, auction and prize draws.  A great girls day out.  We dress nice and have a lovely lunch and watch a great fashion show.

I am also debating what time to get up tomorrow if I should get up extra early and do my cardio or wait until later on in the day.  I will be home in the late afternoon with just Zaxari as the hubby is taking Jaxin to see Toopy and Binoo at the Jubilee Auditorium.  I will have to see how I feel in the morning I guess…mmmm…maybe I should get to bed! 

It is now 11:11pm and getting later….
