Cauliflower Pizza Crust

by Sheri on December 12, 2014

By popular demand I am posting this recipe!

I have made this crust in the past but since then I have tried all kinds of ways to make it and I found this way to be the best thus far so here is the recipe!

2 1/2 cups cauliflower, grated (about 1/2 a large head)

1 large egg & 2 egg whites, lightly beaten

1 cup shredded part-skim mozzarella cheese

2 tablespoons grated parmesan cheese

Sea salt and freshly ground black pepper to taste

  1. Line a rimmed baking sheet with parchment paper, and preheat oven to 425ºF.
  2. “Rice” the cauliflower using a food processor.  Pulse until you have something that looks like little bits of rice.  Place in a large bowl with a little bit of water and microwave for seven to eight minutes, or until soft. Remove from the microwave and let cool.  Once cool you can place the cauliflower in a clean tea towel or cheesecloth to wring out the excess water.  You want the cauliflower to be dry.  Dump it into a bowl.
  3. Mix in the egg, one cup mozzarella, parmesan cheese, and salt and pepper. Once combined, pat into a 10-inch round on the prepared pizza pan. Bake for 10 to 15 minutes, or until golden.  Keep an eye on it as you don’t want it to BURN!
  4. Remove from oven and top with your favorite toppings and return to the oven for about another 6-7 minutes.

Cauliflower Pizza

I put tomato sauce, Flavor God Pizza Seasoning, ground chicken, mushrooms, onions, corn and spinach on this one…odd combo but good!  I also added hot sauce to the top!

Let me know if you give it try!
