Mmmm….I have a few moments and thought what the heck maybe I will make a post on my blog! Something I have neglected to do for the last little while. I will be popping in from time to time when I get a chance. Right now I am adjusting to my new career as a “Domestic Engineer” aka Stay-at-Home-Mom! So far it is going pretty good…mind you it still feels a little like vacation
Today was a pretty busy day for us. I got up early and got in my workout, showered, got dressed and then made J and I a very yummy and nutritious breakfast.
It included some very tasty and sweet strawberries…so good.
I scrambled some eggs with a little cheese and spinach mixed in and topped them some sweet grape tomatoes plus a piece of Ezekiel toast spread with a little bit of pumpkin butter.
Of course I had a steamy cup of coffee as well in my New York cup.
Filling and totally yummy! J loves cheesy eggs!
My morning was filled with making calls, doing laundry, making lunch and cleaning up and getting out the door because in the afternoon we had an appointment to fit J for his new AFO’s his custom made orthotics’. The weather today was really quite beautiful and the mountains were crystal clear as well!
I LOVE living this close to the Rockies.

I hated to wake him but you do what you gotta do!
While we waited J had fun flipping through a book. He loves to look at books!
Then it was time to mark and measure…
J watched intently as Marc did his job. He is such a good little boy! After he did that we had to come back in about 30 minutes. So since I had some time to kill we took a short drive down the road to the book store.
Where we purchased a few really cute books for J off the clearance table and Mommy got herself a little afternoon pick me up.
A Iced Skinny Vanilla Latte…it hit the spot! My first cold Starbucks this year.
Then we hightailed it back to the clinic.
While J was getting the final fit he snacked on some cheezies. He was getting a little cranky so this made him pretty darn happy. No afternoon nap makes J a little crabby!
After they were fitted correctly we then picked out a pair of stylin shoes as well.
Cute little brown leather shoes that are easy for Mommy to put on…thank goodness for VELCRO!
When I got home I got started on prepping supper. The Clean Food cookbook was my inspiration tonight.
I made Artichokes, Fennel and Olives over Penne for the hubs and I. Plus I made the Spicy Sweet Potato Fries to go with J’s supper.
I started with J’s meal first. I made him something different since I did not think he would really appreciate the “grown up” taste of the pasta.
Plus it was really easy! I bread some halibut fillets to make my own “fish sticks” for him. The assembly line had the halibut, egg whites and seasoned panko crumbs. I seasoned the panko with lemon pepper and parm cheese.
1…2….3….and everything was ready for the oven.
Nutritious and easy to throw together. Took me maybe 10 minutes.
Next up our meal…
I assembled all the ingredients first to make it easier to put the sauce together. The penne was cooking while I chopped away.
I sipped on this red Grenache Shiraz while I cooked. It has been sitting on the counter for a bit and I need to finish it up. I really like this blend of red…it is delicious.
The finished pasta was DELISH! I really loved it and it was full of flavour. One thing when you make this recipe it is really good to use a good quality Olive Oil since that pretty much makes the “sauce” along with the veggies.
It also has greek olives which are my fav!
I love the salty strong taste of them and they were soooo good in this dish.
I also topped my pasta with fresh parm cheese and hot chili flakes to give it a little heat. Loved it!
Of course the hubs being the meat lover that he is said it would have been really good with some Chorizo sausage added…mmmmm…maybe next time. I have a bunch of leftovers which I will be reheating for supper tomorrow night since the hubs will be at a meeting.
Well time to get myself ready for bed. I have another busy day planned again for tomorrow.
