Chocolate Cherry Covered Cookies

This recipe is one of my husband’s favorites and I make them every year for Christmas.  These cookies are a bit more tedious then your ordinary drop cookie but are totally worth it.  I love the cookie, the cherry and the chocolate top!  They have become a tradition in our house at Christmas time.

Give them a try and add them to your Christmas baking list…I promise you will not be sorry!

1 1/2 cups all-purpose flour
1/2 c\cup unsweetened cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup sugar
1 egg
1 1/2 teaspoon vanilla
1 10 ounce jar maraschino cherries (about 48)
1 cup semisweet chocolate chips
1/2 cup sweetened condensed milk

Preheat oven to 350 F.

Combine the flour, cocoa, baking soda, baking powder & salt together, set aside. Drain cherries, reserving juice. Set aside.

In a large mixer beat the butter on medium speed for 30 seconds. Add the sugar and beat until fluffy. Add egg and vanilla beat well. Gradually add the dry ingredients beat until well combined.

Shape dough into 1-inch balls.  Place them 2 inches apart on ungreased cookie sheets. Press down your thumb to make an indentation in the center of each cookie.  Place a drained cherry in the center of each.

For frosting, in a small saucepan combine chocolate pieces and sweetened condensed milk.  Cook and stir over low heat till chocolate is melted.  Stir in 4 teaspoons reserved cherry juice.  Spoon about 1 teaspoon frosting over each cherry, spreading to cover cherry. (Frosting my be thinned with additional cherry juice, if necessary) I usually do this!

Bake for about 10 minutes or till edges are firm.  Remove from oven and cool completely on wire racks.

Makes 35-40 cookies.

Finding that chocolate is a bit diitencorcsng! All I see is a very small blue box with a question mark in it. I am assuming that is supposed to be the Cherry Chocolate Creme. Please check and fix for our younger Webkinz fans. Thank you.
