Christmas on the brain

Christmas is only a month away and this year and I started my shopping early.  I have picked up a few things and gotten some stuff of my list already.  I am not leaving anything to the last minute this year.

This morning I also made my baking list.  On my list this year is:

  • Cherry Almond Biscotti
  • Chocolate Covered Cherry Cookies
  • Oreo Truffles
  • Skor Bars
  • Thumbprint Cookies
  • Creamy Lemon Squares

I think that should be good.  I might just also throw a batch of pecan tarts in there or maybe some shortbread.  I am not sure.  But I will start with that.

Next weekend I will get to putting up the tree and doing a little decorating!  I just love Christmas.  It just puts me a such a good mood!

This morning I slept in till 9:30 it was great…I was just wiped out!  For breakfast today I made a yummy pancake.

IMG_7958 I topped it with Mighty Maple PB, banana and a little sugar-free syrup.  Oh so good!  Of course I shared a little with J.  He always has to have what you are eating!

IMG_7957 I also had a cup of Loose Leaf Spring Blend green tea.  This stuff smells wonderful and tastes even better.

I ended up putting J down for a morning nap today.  He has been pretty cranky the last few days and seems tired.  Hmmmmm…maybe he is going through a growth spurt again??  Not sure..but anyway it gave me some time to just hang out and chill.  I read a few blogs and did a little on-line Christmas shopping. 

My lunch today was light.  I was in a funny mood and not sure what I wanted really.

So I settled on an fried egg sandwich on sprouted grain and a small salad all on my snowman plate!

I was craving some mustard so on it went!  It was pretty good actually.  I also put a bit of aged white cheddar on too.

IMG_7964The salad consisted of baby greens, fresh from the market tomatoes and cucumber dressed with fresh lemon juice.  Simple and refreshing!

IMG_7962 All in all a very tasty lunch.

My afternoon was pretty tame actually.  I took a shower around 2pm and then went out to get a few things.

Tonight for supper we went out as a family for some Vietnamese.  This is something I had not had in quite awhile and was craving it.  So we went to a restaurant in our neighbourhood.

P1030887 Hubs ordered a Mango Bubble Tea.  He shared a little with J of course.

We started out with a few salad rolls but I forgot to take a picture.

My main course was Lemon Grass Chicken Satay Vermicelli it was so yummy!

P1030891 I ate pretty much all the good stuff off the top plus some of the noodles.  I can never finish the whole thing it is huge!

P1030892 The hubs had a beef satay soup.  Nice and spicy the way he likes it and also some of it ended up on his shirt!  It is quite messy to eat.

For J we got just a simple chicken, veggies and rice.

P1030890Not a very good picture but this was of course a lot for my little man but we took the leftovers home and I think I will be having some for lunch tomorrow.

J is now in bed and we picked up a new Mario Brothers game for the Wii tonight so we are going to get comfy and play.  It has been awhile since I have played it should be fun.
