Ok, I found this recipe on Theresa Jenn’s blog and I just had to try it. She said it was moist, clean and best of all delicious. Since I have my new fitness goals for 2013 I thought this would be the perfect cake to make for Jaxin’s Birthday cake so I could also have a piece. Plus it is good for all of us. A win in my books.
Now, I have tried baked protein recipes before and have not had stellar results but I am game to try anything once. So I whipped it up. It really is a synch to make and is nothing but clean ingredients.
I have to tell you it was delicious! I really did enjoy it! It is moist and dense and the frosting on top is so yummy!
RECIPE:
156 grams Oatmeal Flour (Take slow cooking oats dry, blend them up into a flour using the blender)
2 Scoops of Whey Protein Powder (whatever one is your favorite)
1/4 tsp Sea Salt
1/2 tsp Baking Soda
Take all dry ingredients and mix them together well.
In a separate bowl mix the following:
126 grams of Egg Whites
1/2 cup Water
1 Cup Blueberries (Blend them up in food processor)
1/2 Cup or (120 grams) Non Fat Greek Yogurt
1 TBSP Pure Vanilla
3 TBSP 100% Cocoa Powder
Once both bowls of ingredients are mixed well, take the wet ingredients and slowly mix them into the dry ingredients. Mix well.
Spray non-stick spray into a 9 inch cake tin. Pour the ingredients into the tin.
Bake for 25-30 minutes at 350 degrees. Let cool. Check with a fork to see when the batter is cooked. Be careful not to overcook your cake! If you overcook it will you will end up with a very dry cake.
CASHEW BUTTER ICING Recipe:
4 TBSP Natural Cashew Butter
1/4 Cup or (60 grams) Non Fat Greek Yogurt
1/2 tsp Pure Vanilla
2 packets of Stevia
Blend all together and done! Ice your cake after it has fully cooled. I iced my cake the next day.
Give it a try…I think you will be surprised by how good it is! Clean eating really can be decadent and yummy without losing the focus of your goals!
Unfortunately Jaxin has a nasty cold for his Birthday this year…my poor little boy! But he did have a couple of bites before not wanting anymore. He did not even want his most favorite meal of an A&W Hamburger that Daddy brought him home for supper. That is when I KNOW that my baby is not feeling well.
He did try to blow out the candle though…
Daddy did help in the end as the wax was starting to drip on the cake!
