Clean Eating Pancakes

New Year new pancake recipe to share!  I LOVE pancakes and these ones are so good!  Thanks to my fitness inspiration Theresa Jenn for the recipe!


Makes 1 serving

Blend the following ingredients:

  • 35g of uncooked Quick cooking oats (roughly 1/3 of a cup)
  • 1/2 TBSP flax seeds
  • 5 egg whites
  • 1/2 scoop Vanilla or Chocolate WHEY
  • cinnamon
  • 16g walnuts (approx. 2 tbsp)
  • 1 over-ripe banana
  • 1/4 cup 1% cottage cheese

Heat up a medium pan and spray your pan with non-stick spray. Add 1/3-1/2 of your batter to your pan, cook, flip, remove, and repeat for the remaining batter.  These pancakes are pretty delicate so take care in flipping them.  Also I recommend cooking them one at a time.

When your pancakes are ready, add 1 TBSP of all natural PB, almond butter, coconut butter, maple syrup and fruit.

I prefer to top my pancakes with PB or coconut butter with a small drizzle of maple syrup and berries!  YUM!
