Today was another busy day. After I picked J up from Grandma’s in the afternoon it all started. I gave J some lunch and put him down for a nap and started my Sunday cook off!
First up some Sweet Potato Lentil Chili for J from Eat, Drink & be Vegan!
I always like to make something nutritious for J for the week and have an easy meal for him when needed and I had all the ingredients so I went with it! I portion out his meals when it is done and put it in little containers and into the freezer.
It smelled so good while it was simmering! I gave him some for his supper and he loved it. I can’t post the recipe but in it was sweet potato, onions, black beans, garlic, crushed tomatoes, red lentils and lots of yummy spices!
Next up I made a whole bunch of roasted veggies!
On this tray was: eggplant, zucchini, yellow zucchini, red pepper, green pepper, red onion and portabello mushroom. I massaged veggies with olive oil and seasoned them with sea salt, cracked pepper and Mrs. Dash. I put it in the oven at 475 degrees for about 45 minutes. They turned out wonderful!
While that was cooking I made some spelt pizza dough. It was super easy. This was for our supper.
I stretched it out on the pizza pan and topped it with some pasta sauce.
Then put the toppings on. It was a his side her side pizza! On my side I put 2 slices of deli ham, some of the yummy roasted veggies, mozza cheese and spinach! So yummy!
On his side was: ham, salami, mushrooms and mozza! Meat and cheese of course!
It turned out wonderful! I loved the roasted veggies on my pizza! Now I would insert a picture here but when my tired mind realized that I did not take a picture it was too late…I had already ate most of it! Ooooops!
Well with another busy day behind me and the work week ahead of me still I am off to bed!!
