Crockpot Oats

Hello fellow bloggers! 

I started my day off right today I did some quick intense cardio of intervals.  I almost did not get my butt out of bed but I did and I am glad I did.  Because afterwards I felt great and it gave me the energy I needed!

I did a combination of burpees, jumping jacks, butt kicks and mountain climbers and was spent after I was done.

I started my day with a bowl of oats!  It was total yum!

IMG_6982 This is a stock photo.  I was hungry this morning and forgot to snap a pic.  But it was the usual banana oats topped with chia seeds and a little granola for crunch with a spoonful of almond butter.  This held me over till almost lunchtime.

Work was super busy today and I just ate as I went along.  It was freezing in the office today and I drank a lot of warm water with lemon and tea!

Tonight supper was pretty uninspired.

P1030863 Not a very fancy meal…but it did the trick!  The Velveeta pasta was very rich and creamy. J appreciated the cheese pasta he loves his pasta!

After supper I indulged in some cookie eating!

P1030873I had two of my whole made chocolate chip cookies…I may have gone back for a third cookie!

Cockpot Oats

While I am sleeping tonight I will have a cockpot of yummy oats cooking.  The crockpot acts like a bain-marie and produces the most moist and creamy oats.

P1030878This is the best and most easy way to have yummy steel cut oats for breakfast.

First get yourself some steel cut oats.  I just use the President’s Choice brand from Superstore they are very inexpensive and work well.

Measure 1 cup of steel cut oats

P1030879My recipe calls for 1 cup oats to 4 cups water.  This seems to work the best and yields about 4 servings.  Put your measured oats and water into a oven safe Pyrex bowl.  Place the bowl into your crockpot.  Now you will need the bigger crockpot however, it could work with a smaller one if you have a bowl that fits it.  But really the bigger crockpot works the best for this.

P1030876After you place the bowl in the crockpot pour enough water into the base of the crockpot until it reaches the water line in your bowl or just below it.  Then place the lid on the crockpot and set to low. 

P1030877 When you wake up in the morning you will have creamy yummy oats!  Really it is so easy and turns out wonderful!  When I wake up in the morning all I have to do is dish some into a bowl and add my toppings.  The leftovers I just put into single serving bowls and put in the fridge.  It can be easily re-heated in the microwave.
