Today I was up 5:30am to do my strength training. I had a pre-workout drink of Vega and started my workout by 6:00am.
I had a great workout and tested my strength!
TSS Phase II Workout B
All in all a great workout and I have tried to be more mindful of my core and make sure it is tight! I can feel that I did the job as my abs are a little sore this evening!
After my workout I had a post workout shake and jumped in the shower before the boys woke up.
BREAKFAST
I whipped up some scrambled eggs loaded with veggies for Jaxin and I to share.
I put spinach, broccoli slaw and yellow pepper in the mix. I also had a piece of Ezekiel toast. But I only had half of the toast. I got so full just on the eggs. I topped my eggs with some fresh chopped tomato. I love fresh tomato on my eggs.
After breakfast I packed up the boys and we were off. Jaxin had a speech session this morning.
On my way I made a little stop.
I needed my caffeine as I forgot to make myself a coffee this morning.
I sipped away as I drove to the school…I was happy for a warm cup on a gloomy day.
While Jaxin was in his session. Zax and I made a quick stop at the health food store.
I just picked up a few things.

Wheatberry salad to use for my lunch
SNACK
My morning snack consisted of some cut up nectarine and chicken jerky nuggets. Yum!
I ate this while I waited for Jaxin to finish up his session and Zax was snoozing in his car seat.
WATER INTAKE
I made sure to drink 3 of these bad boys today! It is 1 litre.
LUNCH
When I got home and got the kids fed I made myself some lunch. I was not feeling that hungry but it was going onto 1:30pm and thought I better eat something.
I made a yummy salad!
I took the wheatberry salad I bought at the health food store and put it on top of some baby kale greens along with leftover chicken tenders and a few sweet potato wedges. It was so darn good.
The wheatberry salad was so good! I will get it again for sure. All the flavours of this salad worked so well together.
I also had a glass of Kombucha tea with my salad.
After lunch I played with the boys for a bit. We played with a few puzzles and read a few books. I also did a load of laundry.
When Zax went down for a nap I started to prep for supper.
SUPPER
Tonight I made Bite Sized Baked Meatballs with pasta for the boys and zucchini “pasta” for me.
I LOVE these meatballs they are full of flavour and so easy to make!
Bite sized Baked Meatballs
1 pound Lean ground Beef
1 egg
1 tbsp of Olive Oil (I used my garlic Olive Oil)
1/3 cup of Parmesan Reggiano cheese shredded
2 garlic cloves, minced
1 tsp dried basil or fresh if you like
1 tsp dried parsley
1/2 tsp sea salt
1/2 tsp of fresh cracked black pepper
1/4 cup panko bread crumbs
3 cups of your favourite pasta sauce
Preheat your oven to 400 degrees F.
In a large bowl combine the ground beef, egg, oil, cheese, breadcrumbs, garlic, salt, pepper, basil and parsley. Mix to combine, gently tossing a few times with your hands. Do not overmix or you will end up with tough meatballs! Spray a large glass baking dish with non-stick spray and add 2 cups of pasta sauce to coat the bottom. Roll beef into mini meatballs (about a tablespoon of the mixture per ball) and set in the sauce. Once all meatballs have been added sprinkle additional cheese and breadcrumbs over top if you like. Serve with additional sauce if desired
They smell delicious when they come out of the oven!
They tasted awesome on a bed of zucchini pasta! YUM!
I sprinkled a little more cheese and hot pepper flakes on top. I loved the zucchini pasta!
Tomorrow I have another busy morning. I have to take Jaxin to an eye appointment for 9:15am. But then the rest of the day is free. I will have to think of something fun to do with the boys in the house as our weather has turned windy and rainy!
