DAY 39 – making it happen

by Sheri on July 26, 2012

make it happen

That was my motto when I woke up this morning!

I had such a good sleep last night!  I did not wake up once until my eyes popped open at 6am.  Which does not happen very often.  I wake up at least once during the night!  I am also blessed with children that LOVE to sleep!  Since I felt good I decided to get up and do my workout before the boys got up.

I got up had a big glass of water and a pre-workout drink while I checked my email.  Then I did my intervals.

Today I did 45/15 of Mountain Climbers and One Arm KB Swing.  I started off using my 25lb KB for the swings but it proved quickly to be too much so I moved down to my 15lb KB which is a little too light.  I need to get a 20lb KB I think.  After 15 rounds of that I did the Core Circuit.  I loved it!  I was sweating good after completing 3 rounds.

I decided today to make a protein pancake.  I had a hankering!

I topped it with a little natural peanut butter, 1/2 a sliced banana and some blueberries.

Of course my morning coffee!

After breakfast I did a little cleaning up and a few other things like kid laundry.  Seems I am always washing cloths or bibs!  When Zax went down for a nap I hopped into the shower.  It felt great!  I was feeling a little yucky after my morning workout.

I did not have a mid morning snack since my pancake kept me full till lunch time.

I had to have this sandwich again since it was so good the first time.

2 slices of Ezekiel bread with hummus as a spread, fresh tomatoes, sliced pickles and spinach.  YUM!   This sandwich is the bomb!

I also had a sliced pear.

After lunch the boys and I headed to the mall.  I promised Jaxin a trip to the bookstore and a ride.  He LOVES the bookstore children’s section.  They have a train table set up and a bunch of other stuff.  So I let him play for awhile and then we picked out a few games to bring home.  I don’t buy Jaxin toys that often so I thought It was time to get him something.

We got a Melissa & Doug Puzzle. It is magnetic and you lift the pieces out with the fishing rod.  SO cute!

He LOVES it!  Plus it is so fun to play around with it with him.

We also got this Cooperative Game.

Hoot Owl Hoot

His speech therapist said it would be good if I got him a game that uses colour matching and this is what this one is all about!  Perfect!

I also did a little school cloths shopping for Jaxin.  The Gap Connection is having an awesome sale right now so I managed to get some good deals.

When we got home we all had a snack.

I had a green smoothie.

I used a cup of coffee as my base and then added frozen strawberries, a small banana, 2 big handfuls of spinach and 1 scoop of Prograde Choco Protein powder.

Jaxin and I played his new games until I had to start supper.

I was a crazy woman today at least 4 Litres!  Really thirsty today and I was chugging all-day-long!

On tonight’s menu was a salad.  I had a few chicken sausages in the fridge that I thawed that needed to be cooked up.  So I decided to beef it up a little with beans.

Black beans.  I love Eden Organic beans of any kind really they are so good!

I took the the can of beans and mixed them with a few things in a bowl.

1 cob of fresh corn cut off the cob
1 cup of cherry tomatoes halved
1 medium yellow pepper diced (you could use a red pepper too but yellow it what I had on  hand)
4 green onions sliced

To this I added a dressing of:

a scant 1/3 cup Olive Oil
2 tablespoons of Lime juice
2 tablespoons chopped fresh cilantro or more if you love cilantro like I do!
1 tablespoon of Apple Cider vinegar
1 garlic clove crushed
1/2 teaspoon of chilli powder
sea salt to taste, optional of course but a little does bring out the flavours more
fresh ground pepper

I added the dressing to the bean mixture and stirred to combine it until everything was well coated.  I let it sit on the counter while we bbq’d the chicken sausages and I cleaned some romaine lettuce.

To serve I put about a cup of the bean mixture on top of a bowl of romaine lettuce.  I then placed my bbq’d chicken sausage cut up on top.  I also added two little slices of avocado since I had one in the fridge that was going south!

IMG_1907This salad was awesome!  I have leftovers and I plan to make it for my lunch tomorrow but with shrimp instead of chicken.  You could topped this salad with chicken, beef or shrimp and it would be delish!

IMG_1909SO Yummy!

IMG_1911I also had a glass of Cosmic Cranberry Kombucha.  I need to get more.

Tomorrow’s workout is TSS Phase II Workout B.

Now it is time for bed!
