Day 41 and a Sautéed Kale Salad

The weekend I love the weekends.  They are more relaxed and plus the hubby is at home!  Also the weekends are usually the times when I get to get out by myself and have some much needed me time!  Today I had a pedicure appointment booked for after lunch!

BREAKFAST

Today was a protein pancake kind of day.

It does not look pretty but it tasted so darn yummy.  I spread a little bit of peanut butter on top.  No banana this morning as I was out!  ACK!

I also had a cup of coffee.  This breakfast is so delicious so yummy and so filling!

Kept me going right until lunch time.  Today for some reason I totally forgot to snap a pic of my lunch.  But I had some salad wraps with smoked deli turkey meat, hummus for spread, pickles and mustard. 

After lunch I headed out to my pedicure appointment plus I had a few other things to do.

I even got wild and let her put a design on my big toes.

After my pedicure I took the hubby’s car for a fill up and a car wash.

I relaxed and sipped my iced coffee.

Then I went to the mall and took a pair of my shorts that I just bought at the beginning of summer to have the waist taken in!  It was pouring when I reached the mall!  So I had to wait for a bit in the car till it blew over.  It was just one big huge BLACK cloud that I was praying did not have hail with it.  It didn’t that goodness!

On my way home I stopped at Superstore.  I made sure to park far away from any curbs and other cars.  Did not want to chance it after yesterday with my car.

Yes, the hubby and I both have Jeeps.  Except he has the Overland and I have the SRT which is faster!! HA!

SUPPER

Tonight we planned on steak and lobster.  I also make a little Kale Salad.

I got my inspiration from a recipe I found in Chatelaine Magazine.

Ox & Angela is a great restaurant here in Calgary.  So that is what caught my eye!  This recipe had raisins and sherry in it which did not really sit well with the hubby so I changed it up a little to suit the his taste more.  Of course..I added bacon!  Bacon makes everything taste good right?

Sautéed Kale Salad (adapted from Ox & Angela’s)

4-5 slices of applewood smoked bacon – diced
1/4 cup pine nuts
1/4 cup panko crumbs
2 tbsp of olive oil
2 large shallots, diced
2 tbsp fresh lemon juice
1 tsp Dijon Mustard
1/8 tsp sea salt
1 bunch of Kale, about 8 cups chopped

Heat a large frying pan over medium heat.  Add pine nuts and panko crumbs.  Toast, stirring often, until fragrant and golden about 3 minutes.  Transfer to a bowl.  To the pan add the diced bacon and diced shallots.  Cook until bacon is crispy.  Whisk the olive oil with lemon juice, Dijon mustard and salt in a small bowl and set aside.  Add Kale to the pan and cook until the Kale just starts to wilt, about 3-4 minutes.  Add the vinaigrette and stir just until coated.  Transfer to a platter and sprinkle with pine nut mixture.

The ingredients a few from the Farmers Market.

Instead of the raisins and sherry I used bacon at the hubby’s request.

About 4 slices cut up and sautéed it along with the shallots.

Mixed up the vinaigrette while that was cooking.

I added the Kale to the pan once I had the bacon cooked to my liking.  It did not take long to wilt.

In the bowl and sprinkled with the pine nut mixture.  It was yummy!

My plate.  The hubby and i shared the steak and the HUGE lobster tail.  This meal was very good!

After supper the hubby got the kids ready for bed and I got to tackle the mess in the kitchen!

I wish there was a kitchen fairy that would come and do it for me!  Sounds lame…but I love to cook just hate the clean up!
