Hello!
Sorry for being MIA yesterday…but I was feeling pretty awful! I stayed home from work and stayed away from the computer and got some rest! It was great and much needed. I stayed in my bed pretty much all day, watched TV, read and drank warm yummy herbal tea!
I woke up this morning feeling pretty good and I think I will try and workout tomorrow morning since I am feeling a little sluggish!
Today for breakfast I had some egg whites all wrapped up!
I zapped about 2 egg whites in a ramekin in the microwave for 1 minute. Placed them in a Ezekiel wrap with a little jalapeño cheese and some spinach. Fast and tasty!
Unfortunately when you take a day off work…work does not stop! I opened up my email and had quite a few to respond to! Once I got that out of the way I tackled some meeting minutes that needed to be typed out from Monday.
Then it was snack time!
Today I brought a thermos full of Zesty Carrot Juice! This combo is really good! Plus I thought the nutrients and vitamins from this would be good for me.
When I take fresh juice to work I put it in my thermos with a few ice cubes. It keeps it nice and cold until my break.
I love the bright orange color from the carrots.
I also had a square of an Oatmeal Raisin Bar.

After my yummy snack I worked away on a bunch of stuff till lunch. When I went to put my lunch together today I discovered I had forgotten a important ingredient! I brought all the fixin’s for my veggie sandwich but I forgot the BREAD! So I thought no problem I will just build a mini salad. Well when I cut into the avocado it was a rotten inside! BLECH!
So with that I thought I will need to go and get something. I had to go to the grocery store anyway to get a few things so I picked this up while I was there.
I have seen a few people have these in the blogosphere so I thought I would give it a try!
I paired it along with the veggies I had brought
some cherry tomatoes , cucumber spears and a little bed of spinach! It was very good and filling!
I let my lunch settle a little and then decided that I would like my fruit…so I ate it!
A fuzzy kiwi and a handful of blueberries…that really needed to be eaten!
At about 3pm I was getting a little snacky. So I pulled out some Sabra Toasted Pine Nut hummus!
I dipped a cut up red pepper into it.
I just love eating hummus this way..crunchy and creamy! Delish!
My drive home tonight was not fun! The traffic was backed up no matter which way I went and took me an hour to get home!
Supper tonight needed to be quick as we had a appointment with Jaxin’s teacher. She was coming to our house for a little visit.
So I threw together a grilled chicken burger and kale chips for me and my hubs!
Beautiful crispy green Kale chips. I roasted them in the oven for about 15 minutes at 475 degrees. I spritzed them with olive oil and then topped them with sea salt, cracked black pepper and Parmesan Reggiano cheese! So very good!
Something to dip then in….
I put my chicken burger on a whole wheat sandwich thin topped with sundried tomato pesto, goat cheese and spinach.
The tastes of this combo were delightful! I love when the goat cheese gets gooey!
Before supper my hubby went to the post office to pick up a little package we have been waiting for!
In this house we like things spicy and we came across this sauce and absolutely love it and need to stock pile in order to feed our craving!

So this time we ordered it up big!! 12 bottles to be exact!
This hot sauce is the bomb and has a great flavour with heat but without masking the flavour of the food! But really it is also good just putting on a corn chip! YUM! This sauce is handmade and has all natural ingredients!
Plus there are fun facts on the bottle! Heee!
We also got the Chipotle Slam to give a try…will let you know how that one tastes later!
After supper I was in the mood to do a little baking and have been really wanting to try Angela’s Peanut Butter and Jam Glo Bites!
So I opened up the recipe on my laptop and got to work.
Filling in the crust and already these look and smell delicious!
They are baking as I type this and I cannot wait to try them for a little bedtime snack! They were really easy to put together and I can’t wait to try one..oh I already said that! HA!
Well this post has been pretty long and I still need to put together my lunch for tomorrow. Mmmmm..I think I will bake off some Teriyaki Tofu next!
