Today I was feeling stylish…I like Fall and I love new Fall cloths!

Feelin fine! I was wearing my black high waist skirt, black turtle neck, black and white shawl sweater and my favourite Hue tights with my patent leather pumps and my chunky necklace.  I was feeling good this morning! 

For breakie this morning I took what was left of my roasted veggies and topped them with a poached egg and had a slice of Ezekiel toast with it.

Work eats went like this:

Freezer surprise

I call this freezer surprise!  I went into the freezer this morning and picked something out it was hard to really tell what it was! :LOL:  I guess I should label my containers!  But when I warmed it up at work it smelled wonderful and was the leftovers of my Chicken Curry! Scrumptious!

The weather here kind of took a turn for the worse this afternoon and got extremely windy and made my drive home interesting.  I had to pass through a huge dust storm along the way.  My poor hubs on the other hand had to ride his bike home in the terrible weather and it took him 1 hour and 20 minutes to get home when on a nice day it would take him like maybe 50 minutes!  He is a little tired tonight to say the least!

But I had a scrumptious meal for him when he got home!  Tonight I decided to give Kath’s Eggplant Parmesan a try.

First I salted my eggplant slices and let them sit for 30 minutes.

While they were sitting I put together the sauce.

finished out of the oven After baking and getting all gooey and it smelled wonderful!  Ahhh…melted mozza cheese…Please!!  I made the same thing for hubs but he got chicken breast instead of eggplant…he is not a fan of eggplant.

Mmmmm... This eggplant parmesan was wonderful!  I served it with steamed Kale generously doused in aged balsamic vinegar.  I went back for some small seconds!

The whole package I had it with the last bit of Shiraz that was in the bottle.  This was soooo good..give it a try! :)

Now it is time to wind it down for the night….see you tomorrow!
