Folding towels and baking

So today I got a taste of what life will be like once I am home full-time looking after J.  It was a good day actually.  I got up at 6am and took a shower and then had breakfast.  I am still fighting a cold so a nice hot shower felt so good this morning.

IMG_8679 My lovely bowl of overnight oats!  Love this stuff it is just so darn yummy!  Plus it is so easy!

  • 1/3 cup Bob’s Red Mill Muesli
  • 2T rolled oats
  • 1T chia seeds
  • 4 oz of plain yogurt
  • 1tsp of cinnamon
  • 2/3 cup Vanilla Almond Milk

Combine all this in a bowl and stick it in the fridge overnight.  In the morning add a few toppings and you have a quick and wonderfully tasty breakfast!

Then I got J up and he had some breakfast of cereal and banana…one of his favourites.  Then we ran out the door to do a few quick arrons before J’s therapist came over.

We had a pretty busy morning.  Once I put J down for his nap after lunch I got busy doing a few things.

Like fold towels.

IMG_8704 My stock of Super Charge Me Cookies had been done days ago and I was do to replenish it!

IMG_8701 I just love these cookies and the best part is I don’t feel totally guilty eating them!  With the good wholesome ingredients they have it is a bonus.

Dinner tonight is going to be good old comfort food since it is quite chilly out today.

IMG_8707 I am making a super easy beef stew from an issue of Cooking Light.  It is in the oven right now and it sure is starting to smell awesome in my kitchen!

Well better get going sounds like J is waking up.
