Hand in the cookie jar

My hand went into the cookie jar twice today.  I recently replenished my Super Charge Me cookie stash and I just could not resist them this afternoon.

IMG_1510These are my absolute favourite cookie.  They are also not all that bad for you either in moderation of course ;)   They are chockfull of healthy ingredients.

IMG_1511 I had my cookies with a nice cup of Coco Caramel Rooibos tea.  Mmmmm…so good!

My morning started off great today.  I got up early and did a weight circuit.  I had looked at my calendar and noticed the last time I had done any weights was about 2 weeks ago…too long in my books!

My workout went something like this:

Tri-set 1 (3 super sets)

  • Forward Lunge (10lb DB) – 8 reps each leg
  • MB Push Up – 5 reps each side
  • SB Leg Curl – 12 reps

60 Second rest and a big gulp of water.  No rest between superset though.  Just keep going that is how you work up a sweat!

Tri Set 2 (3 super sets)

  • 1 Leg RDL (10lb DB) – 8 reps each leg
  • DB High Pull – (15lb DB) 8 reps each side
  • SB Jackknife – 8 reps

It was a good workout and I completed it in about 20 minutes.  After that I dug into a hearty breakfast.

IMG_1460 A lovely bowl of hot oats.  It has been awhile!  This is basic banana oats topped with Naturally Nutty Cinnamon Vanilla Sunflower Butter, drizzle of Coconut Butter and fresh Strawberries.

IMG_1465 I had this bowl gone in minutes…it was so darn good!  I have purchased some canned pumpkin so I think pumpkin oats are going to be making an appearance soon!

I also had a lovely cup of hot coffee of course. 

IMG_1461 I love starting my day with a cup of joe!  Plus it always tastes so good with the oats.

IMG_1466 The rest of my day was pretty low key.  J and I took a walk to the grocery store to pick up a few things and then I did a bit of laundry in the afternoon.  Of course I had my little helper pitch in as well.

Supper tonight was quick and easy.  Chicken stir-fry.  It had been a while and it is a great way to get my picky husband to eat veggies!

I started with getting my rice prepared first. 

IMG_1513 I got this really great Ancient Grains Rice Mix from Costco I love it.  It takes a while for it too cook but love the chewy texture and nutty taste.

IMG_1514 It has whole oats, black barley and quinoa in it. 

IMG_1515 I cooked 1 cup of the rice mixture with 2 cups of chicken stock.  I like cooking it in chicken or vegetable stock if I have it because it gives it some nice flavour as opposed to cooking it in just plain water.

IMG_1517For my stir-fry “sauce” I used Newman’s Own Sesame Ginger dressing.   I really like the taste of this dressing and the best part it adds great flavour without adding a ton of calories.

The stir-fry was chicken with whatever veggies I had on hand.  I threw in onions, mushrooms, orange pepper, broccoli slaw and celery.  I also put in a handful of peanuts at the end.  I love the nutty crunch!

IMG_1520 It was very yummy!  I also put a few dashes of Frank’s Red Hot on top to give it a little bit of a kick!

IMG_1521 I think my eyes where bigger than my stomach because I went back for a smidgen of a 2nd helping and now I have the uncomfortable feeling of full! Blech! 

Well time for my book and bed!  I have a early morning run planned.
