Well we are home and it is back to work tomorrow! Blah! We got up bright and early since check out time was 10 am. It was a very rushed morning so no pictures were taken. My hubby made us breakfast while I got J’s breakie together. I ate my breakfast while standing and packing our stuff up. The morning was very cool and raining when we left.
We got home around 2:00 pm. Then the unpacking and the putting away of the stuff took place. After I got most of it put away I had a look in my fridge and decided a trip to the grocery store was in order. I managed to clean it out pretty good before we left so there was pretty much nothing.
So since I had a bunch of fresh veggies from my grocery trip in the house I was inspired to cook myself a little supper from Mark Bittman’s Kitchen Express Cookbook.
This book has a ton of great recipes that are easy and have simple ingredients.
I decided I would whip up his Eggplant Stir-fry
This recipe was so easy and had like 6 ingredients!
Lovely bright green baby bok choy
Eggplant, tofu, garlic, ginger and Hoisin sauce. That is it. You fry the eggplant and tofu in a little sesame oil with the ginger and garlic in a pan until golden brown add the Hoisin sauce, bok choy and a little water and cook until the bok choy wilts.
I served mine over brown rice topped with green onion and a sprinkle of sesame seeds.
I really liked this combo with the sauce. It was so tasty and I like the crunch of the bok choy.
I also thought it would be fun to eat it with chopsticks!
Those are my cheater ones…I keep a jar of them on my kitchen table! They come in a bunch of fun colors. Sometimes they are fun to eat with plus it makes you eat your dinner a little slower!
This stir-fry was so good and the flavours went really well together. Best part is I now have leftovers for tomorrow’s lunch…I love leftovers!
I was also in the mood to do a little baking! I needed some treats for the week and making my own is the way to go! I decided to make Super Charge Me Cookies from Eat, Drink and be Vegan.
I love these cookies they are so good and good for you too! It is a win win really!
Of course when they came out of the oven I had to have one for dessert…I was ready for a little something!
Well now I need to do a little ironing and hit the hay!
