Well as life goes l have not blogged in a few days. Oh well..I do what I can. So I will just highlight a little of what I have been up to lately.
Lets see…well Friday was pretty low key. Saturday I went for an early morning run and did 4KM. Then I had an eggie breakfast to start my day.
This would be 2 farm fresh eggs scrambled with spinach and topped off with an luscious organic tomato. I am just loving these breakfasts lately!
Also a piece of toasted Ezekiel break with a little raspberry preserves on top.
I was feeling some hot green tea this morning too. Yum!
After breakfast I got showered and headed to the SPA for the day. I booked a massage and a facial for my Birthday! I was excited!

It was a such a relaxing day! My massage felt great and my facial was awesome! When I left I felt like a million bucks!
So I came home and made fish tacos for supper on my new Griddler!
The Griddler in action. This would be tilapia filets coated in an awesome marinade from this recipe I found. I have used it a few times to make this and it is de-lish!
The toppings of romaine, cilantro, red onion, green onion, avocado and tomatoes.
Some very tasty organic salsa.
We also popped open a bottle of Fetzer Gewürztraminer…it was fantastic! I am not a white wine drinker but I REALLY liked this one and so did the hubs. I will definitely buy this one again. It was crisp, peachy and sweet and tasted great with the spicy fish tacos. I really like Fetzer wines they have some of my favourite reds.
All assembled and ready to snarf down…it was so good. I had two!
Breakfast on Sunday morning was some French Banana Toast.
I bathed two slices of Ezeikel bread in mixture of eggs, splash of almond milk, mashed banana, cinnamon and vanilla.
While my slices were cooking before I flipped them over I sprinkled them with some coconut and a little chia seeds.
I topped them with pecans, black berries and a drizzle of Agave syrup. Mmmmm…this was so yummy!
I enjoyed it with a cup of hot coffee.
Sunday was a get things done kind of day. I took a break from exercise to give my legs a rest. I also made a trip to the farmers market and picked up some fresh veggies. I however forgot to take a picture of the farmers market haul but instead how about some nice candid’s of my still beautiful birthday flowers that I am admiring everyday!
They are still holding up extremely well.
Gerby daisies are one of my favourite flowers. I love the bright and vibrant colours they come in.
Oh…looks like I did manage to take a pic of my lovely avocados that I picked up. Just waiting for them to ripen! Then I can start consuming…Yum!
Which brings me to Monday…today! This morning I got up bright and early and had a very refreshing run! It was lovely. The sun was just starting to come up as I started. I did a quick 4K. My runs in the morning tend to be short since I need to be back at home before the hubs leaves for work. But I really quite like it that way. It gives me a great boost to get my day started.
For breakfast this morning…I had Eggs! Again!! They just taste so darn good lately…I just had to have them this morning. Plus I really wanted to top them with the organic heirloom tomatoes I got from the Farmers market. They were perfectly ripe and sweet…so very good.
I had my spinach eggs with a few black berries and a piece of toast smeared in raspberry preserves.
Some hot coffee in my New York mug…wish I was there! Love that city!
After my breakfast my morning started off with a bang. It was a busy one. We hightailed out to the mall to meet with J’s Developmental Aid to work on his walking. The mall is a great place to take him in the morning since it is pretty quiet and he has a ton of room to use his walker.
Plus he get rewarded with a few rides for all his hard work!
My Mom also came with us this morning to do a little shopping and visit.
When we got home I put J down for a much needed nap. He has a bit of cold right now so all his work in the morning wore him out!
I decided to do a little baking.
Some Super Charge Me Cookies! I LOVE these darn things and have a real hard time keeping my hand out of the container sometimes!
While I was baking I made myself a pot of lovely Strawberry/Kiwi herbal tea in my new tea pot.
My Mom got me this lovely teapot for my Birthday present while we were at the mall today. I have wanted one for a while but I did not want to spend that much on a teapot for myself. She asked me what I wanted and this is what I led her too! Heeee! It is a Bodum Assam Loose Leaf Teapot and I LOVE it! I think there will be more green tea in my future in the mornings!
Cookies warm out of the oven…the best way to have them. The chocolate chips are still nice and gooey!
Best cookies ever! I even managed to not have one until after I had my supper tonight. Whoaaaa…that is a first!
Supper tonight was a very yummy meat sauce with rice pasta spaghetti.
Ingredients for my special sauce was:
1 15 oz can of crushed tomatoes
1 lb of Organic Ground Bison
mushrooms (about half of the small package chopped)
1/2 of a white onion diced
2 cloves of garlic minced
fresh oregano from my garden
grated zucchini (evil laugh…muhawwwww)
1/2 a orange pepper diced
dried basil and Italian seasoning
salt and pepper to taste
I cooked the meat first with the onions, garlic and oregano and I also put a splash of Worsteshire sauce in there too. I really like the depth of flavour it gives the meat. Once it was browned I basically threw everything else in and let it simmer away. It smelt amazing while it was cooking.
We had it with some rice spaghetti pasta.
The bubbling sauce of yumminess!! Hmmmm…I cannot find a picture of my beautiful bowl of pasta…but take my word for it…it was yummy!
Well there is my last few days in a nutshell! I am bushed and need to get myself to bed!
