Happy Earth Day!
Since today is to honour of our Earth and to live a little greener to protect what we have I thought I would share a few things that I do to try and live a little greener.
I use reusable totes and bags when I do my shopping. I got myself the EnviTote and just LOVE it. I use it for just more than my grocery shopping.
When packing my snacks or lunches to go I use these really cute reusable baggies to put them in. I got them from WasteNot Saks. They have a ton of cute patterns to choose from.
I have a sandwich bag and two snack size bags.
I carry my water bottle with me wherever I go.
I must confess I have a few water bottles but I use this one the most because it fits nicely in the cup holder in my car.
I bought a set of glass storage bowls for my leftovers and such to eliminate the plastic stuff.
I have also been trying to buy more organic produce when I can. Especially the “dirty dozen”. I downloaded this really cool app to my iPhone to help me remember what they are.
It was free and will come in handy for me since I always have a hard time remembering which veggies and fruits are the worst culprits for pesticides.
I started my morning out with a 2 mile run. It was another perfect day for a morning run. It was a little windy but not too bad. I met my running buddy and we hit the pavement.
I actually ended up doing a little over 2 miles in 22 minutes. The air this morning smelled so fresh it was great.
When I got in I made myself a big green monster.
It was cold, creamy and delicious! This was my usual mix of hemp protein powder, almond milk, 1 small banana, Amazing Grass and spinach. Health in a cup…yum!
After getting J up and fed we went on a little outing with a friend. When we got back it was a little past our usual lunch time so I whipped something up quick for J and once he was happy I worked on mine.
I was feeling like eggs this afternoon so that is what I had.
I did Ashley’s pour, poke + spread method today.
With the eggs I made a wrap.
Whole Wheat Wrap topped with:
2 tbsp tomato paste
baby greens
2 eggs (pour, poke + spread)
1 tbsp of sunflower seeds for a little bit of crunch…it was delish!

For dessert I had something special….
a perfectly ripe champagne mango. I picked this up at the market the other day as a treat these little mangos are pricy little suckers!
I LOVE these mangos they are buttery, smooth and practically melt in your mouth!
They are like sunshine in a cup! Mmmmmm….I might have to get me some more! I think a trip to the Farmers Market tomorrow might be in order.
Well I better get a going…I have to start preparing supper. I have a recipe from the Clean Food cookbook that I am going to try out tonight.
