Today I thought I would share one of my very favourite breakfasts. I love pancakes but normally in they are not very good for you. But this pancake is!
It is a protein pancake that I make when I am craving something warm and comforting in the morning for breakfast. Plus it goes so well with a steaming hot cup of coffee!
Golden Protein Pancake
Ingredients:
1/2 cup of old fashioned oats
1/3 cup of cottage cheese
3 egg whites (you could also use 2 whites and 1 whole egg)
a dash of cinnamon or pumpkin pie spice, scoop of pumpkin puree or whatever you like!
Instructions:
Place all ingredients in a magic bullet (or any other blender) until mixtures combines into a smooth batter. Pour batter into skillet sprayed with cooking spray or a little coconut oil is good too and cook like a normal pancake. Top with berries, nuts or nut butter and drizzle with maple syrup. So easy, so delicious, so nutritious! A must try!!
I love to top mine with a 1 tbsp of natural peanut butter, sliced banana and this morning a few blueberries! YUM!
and of course that steaming cup of hot coffee!
