I am really loving the fall veggies right now…they are all so good! Eggplant and squash are topping my list for sure.
This morning I woke up before my alarm by almost a half hour and what did I do turn my alarm off and then fell back to sleep and then bolted awake at about 5:15am which is way past the time I get up to workout…so I could not exercise this morning. Oh well..I will get up and sweat with Jillian tomorrow instead!
My breakfast this morning was a stick to your ribs bowl of oats.
Pumpkin oats actually and they were oh so yummy! I topped my bowl with pumpkin butter, coconut and a few dark choco chips and a spoonful of almond butter. It was a wonderful way to start a misty cold morning!
Work today was another pretty busy morning…I took my lunch break early today because I needed to visit the dentist and get a chipped front tooth fixed. It happened last week and it was less than attractive. Pleasantly my appointment was painless and I walked out with a pretty repaired tooth!

A yummy Honey Crisp Apple and a funky cheese stick…hence it went straight into garbage!
I rummaged through my snack drawer and found this…I had half of it with my apple instead.
A lovely Ruby Chai tea to sip in the afternoon. This tea smells unbelievable! I always get people poking their head into my cubicle asking me what I am drinking it SMELLS that good!

Lunch
Lunchie today was so yummy! Since I have my Sabra in the fridge right now I used it to make a veggie sandwich today.
On sprouted grain bread I spread some Sabra Roasted Red Pepper hummus the filling was spinach, red pepper, red onion and leftover grilled zucchini. It was so darn good!
With that I had a cup of Organic Creamy Tomato Soup Low sodium by Pacific Foods. This was the first time I had tried this brand and it was quite good. Tasted pretty close to whole made I would say.
This afternoon at around 3:30pm I got a little board…
What do you do to kill a half hour when you don’t feel like working anymore….well take goofy pictures of yourself with your camera of course!
I know I am a totally dork! :LOL: But what can I say….
For fun I also had a look at what the weather is doing in Vancouver since we are going there in a matter of days now….I can’t wait!
Sadly it is not looking to good for us! It has been raining pretty much non-stop right now there. But it is really not surprising…that is what happens in Vancouver in the Fall! I will be making sure to take my umbrella and my rain jacket!
Supper
Tonight I made one of my favourite stir fries from Mark Bittman’s Kitchen Express cookbook. This book has so many good recipes and they are fast and very easy to throw together! Which is perfect for me since I don’t really want to spend all my time in the kitchen during the weeknights.
While I chopped, assembled and cooked I was sipping away at this.
This is one of my favourite California red wines…I just love it!
It has wonderful berry flavours and a hint of chocolate and a smell of vanilla…so yummy! and is a reasonable price too!
The tasty recipe I made was an Eggplant Stir-fry. In this stir-fry is eggplant, firm tofu, bok choy and Hoisin sauce is used for the sauce with ginger and garlic mixed in as well. All the flavours make this so very good. I garnished it with fresh scallions.

The hubs is not a fan of either eggplant or tofu so I made him some scallops to have with the rice…I stole a few for me.
I poured a splash more wine to have with supper.
Ooops…first try I missed the glass trying to take a picture while pouring…darn multitasking!

After supper a little dessert was in order….
A repeat from last night of a Pumpkin Bar topped with vanilla fro-yo but tonight I also put a drizzle of maple syrup and a few peanut butter chips! Yummo!
It was shared with J since he was practically climbing on my lap to have some! Crazy little boy! He just gets right in there and keeps saying num..num..num..num!! So darn cute!
Well time to call it a night!
