Jeeze I cannot believe that it is October already!  Where and when did September go?

But October has got to be my favourite month of the year.  I love the cool crisp air, the pretty colors of the changing leaves on the trees, Thanksgiving turkey and of course Halloween!  I just really love everything about this month!  Not to mention I get to break out my warm cozy sweaters, scarves and boots!

I started my day with an early morning Strength workout.  I am on the last week of September workout of the month.  It was Workout B today it is pretty hard with two dumbbells and holding them for the full 4 rounds!

BREAKFAST

A serving of the Spaghetti Squash Breakfast Bake.  It was delicious!

I topped it with a little spicy salsa.

I also had a cut up peach on the side.

In my coffee this morning was not my much loved Coconut Creamer like I usually have as the health food store was out.  So I decided to try something new.

Sorry, but this did not cut it for me!  It ended up like this in my cup moments later!

YUCK!  It separated and it was not creamy at all like the Coconut Creamer that I usually buy.  I will be going as soon as I can to track down my beloved creamer!

Monday was a busy day.  Since it was a lovely morning I walked Jaxin to school and then I walked to the library from there which I then discovered was not open that early.  So I turned around and went home.  Nice long walk though.

When I got home I put Zax down for a little nap and I tried to get some things done around the house.  I also packed up some snacks and lunch for myself since we were going to meet the hubby for lunch.  He forgot some papers at home so I needed to deliver them to him.

Lunch: Tuna mixed with some chopped Kale and a little of the leftover Artichoke Salsa, an apple, some zucchini and red pepper sticks and a cheese stick.  Lunch and a snack covered.

I picked Jaxin up from school and we went straight to meet Daddy for lunch.

I munched away on my salad…it was so good!  I forgot that I also added beats to the top at the last minute.

After we had lunch with Devin we were off to Jaxin’s speech session.  The reason I packed afternoon snacks.

Once we were home.  I let Zaxari take a much needed nap and I started to prep supper.

SUPPER

I made a recipe I found in the Sobey’s Inspired Magazine that you get for free from the store.

Creamy Cauliflower & Chicken Orzo

I did change up the recipe a little with what I had on hand.

I used Spelt Orzo that I had in my pantry.  I picked it up once when I saw it at the Italian Food Market.

I also used BBQ’d chicken breast as opposed to the Rotisserie chicken that you can purchase at the store.

The meal was pretty easy to whip together and tasted great.

It reminded me of a risotto almost.  Very good!

Creamy Cauliflower & Chicken Orzo

Ingredients:

1 tbsp of Olive Oil
1 tbsp of organic butter (gasp) go on it is good for you in little bits!
2 garlic cloves crushed
2 cups of thinly sliced cauliflower florets
1-1/2 cups of orzo
1 bay leaf
2 cups of Low Sodium or No-Salt Chicken Broth
1/2 cup frozen Petite Peas
1/4 cup of grated fresh Parmesan Cheese
1-1/2 cups of cooked diced chicken breast
Salt and pepper to taste

Instructions:

In a large deep skillet, heat oil and butter over med-high heat.  Add garlic and cook until fragrant, about 30 seconds.  It does not take long or it will burn.  Add cauliflower and cook until tender and golden, about 5 minutes or so.  Add orzo and bay leaf and stir until just coated with oil and butter.  Add broth and cook, stirring often, until the orzo is al dente and most of the liquid has been absorbed, about 10 minutes.  Stir in peas, Parmesan and chicken and cook for 1 min.  Season with salt a pepper.

Note: Because I used a wholegrain orzo I needed to add a little more chicken broth about a 1/2 cup since it absorbs the liquid more quickly before it is fully cooked.
