I am also very excited to say that I will be going to see a concert this fall in Las Vegas baby!
OH YEAH!! Hell Yeah…Garth Brooks!! I am beyond thrilled! The hubs and I are going to have a blast! You see Garth Brooks is the hubs favourite country singer and he has always wanted to see him. Well when we got an email with new concert dates for Vegas we snapped them up! So on November 19th we will be 3rd row centre stage!! I will be able to see Garth sweat for pete sake! We are going for 4 days for a little alone time…it will be awesome!

Last night for supper I made some very tasty salmon. The highlight was using this.
My best bud sent me this in a Birthday care package and I thought it would go great on some broiled salmon.
I brushed it liberally on a few salmon fillets.
I popped them in the oven for about 10 minutes or so to bake.
I also made some steamed asparagus and a quick quinoa salad to go along with it.
I took about 12 spears of asparagus and steamed them with a few lemon slices.
The quinoa salad I made was based off of this recipe but I changed it up a little bit. I omitted the green beans and cooked my quinoa in chicken stock. I find that it gives a great flavour to the quinoa.
Quick Cranberry Walnut Quinoa Salad
1 cup quinoa
2 cups chicken stock
1 cup dried cranberries
1/4 cup walnuts, chopped
1/4 cup green onions, sliced
1/4 cup balsamic vinegar
1 1/2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
Combine quinoa with 2 cups chicken stock in a medium saucepan and bring to a boil over high heat. Reduce heat to a simmer, cover, and continue cooking until all water is absorbed. About 15 minutes.
In a medium bowl, combine cooked quinoa, dried cranberries, walnuts, and green onions until well mixed. In a small bowl, whisk the balsamic vinegar, olive oil, and garlic until well blended. Pour over the quinoa mixture. Toss until well blended. Season with salt and pepper, to taste. Chill in the refrigerator for at least 30 minutes before serving or serve a room temperature.
**you could also add a little feta cheese and chickpeas to have as a meal instead of a side.
All together on the plate. I really like the salad it was very flavourful with the balsamic vinegar dressing.
The salmon was so good the Maple BBQ Sauce made it all cameralized and so yummy!
After supper I whipped up a batch of brownies. I had a little taste test at the grocery store of this mix and just had to get it and make it myself! All you have to do is add butter and eggs to the mix…easy peasy!
The ingredients are not all that bad either. Nothing I cannot pronounce anyway.
I mixed it up in my stand mixer..I was being a little lazy!
It made a great thick and dark batter.
It came out of the oven looking yummy and smelling wonderful too! J and I dug in!
I topped the warm gooey brownies with a little frozen vanilla yogurt.
Little cup for J. He enjoyed his a lot! I love warm brownies with melty frozen yogurt on top…it was so good! The brownies are so good that today there is only one left and it has my name on it!
Which I think I am going to go and indulged in right now!
