Ha!! hardly! I had a little Pinot Grigio whilst I made supper this evening!
I am not a big white wine drinker but I thought I would try and branch out a little and I decided to give this one a try! It was actually really good. I liked the crisp fruity taste!
My Saturday was pretty low key actually. Hubs had to work for most of the day so it was just me and J.
This morning I woke up with J at 7:30 am and made us a yummy breakfast!
Flax french toast! My portion…
J’s portion all cut up for him!
I topped them with thawed wild blueberries, plain yogurt and a little banana. It was delish!
I washed it down with a lovely french press coffee.
The rest of my day involved a little cooking…..
I decided to whip up some of Gena’s Sunflower Seed and Carrot Pate.
I have seen it around the blogosphere and it looked so delicious…I had to try!
All whipped up and the final result…
I tried it on a cracker right away…it was awesome!
Next up some healthy scones for breakfasts or snacks. I found a recipe and changed it a little with the ingredients that I had on hand. They turned out pretty good!
Multigrain Scones
Ingredients:
1 egg
1/2 cup sugar
5 tablespoons grape seed or expeller-pressed canola oil
1/8 teaspoon lemon zest
1/2 cup oatmeal (not instant)
1/4cup wheat bran
1 1/2 cups unbleached white flour
2 tablespoons millet
2 tablespoons chia seeds
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 cup almond milk
Instructions:
1. Preheat oven to 375° F.
2. Whisk the egg, sugar and oil together in a bowl. Mix the lemon zest and all of the dry ingredients together in a separate bowl and stir with a wooden spoon until all of them are evenly dispersed throughout. Slowly add the dry ingredients into the egg, sugar and oil, and mix to create a thick dough. Add the milk and mix well.
3. Lightly grease a baking pan. Scoop up tablespoonfuls of the dough and drop them one by one in mounds onto the baking sheet, leaving 2 inches of space between. You should have about 10 scones. Bake for 15-20 minutes, just until the crust is barely golden brown and the dough is dry. Remove from the oven and let cool for 10 minutes.
I like the fact they were easy to make and did not require to roll out dough or use a biscuit cutter! Just plop them on a greased cookie sheet…easy peazy!
After my cook off I was a little hungry so I made a protein shake.
I had a late lunch today.
A few Blue Salba Corn chips and a turkey pita wrap.
I am hooked on these! With the turkey I put lettuce, pickles and lots-o-mustard! YUMMO!
Hubs got home at about 2:30. I then ran out to the store to get more milk for J and a few others things.
Supper tonight was one of my favourite easy meals!
Tuna casserole and brussel sprouts! Mmmmm…so good!
I doused my portion in hot sauce and sipped my pinot with it! Such a great meal…so simple but so flavourful!
Well it is pretty late and I need to get to bed. We have a road trip tomorrow! Time for family and turkey! Can’t wait!
