Pizza Friday

I started my day off right with a early morning run of 5Km’s at 6am.  I ran as the sun started to come up..it was cool and crisp and felt great!  I just love running in the morning.  It is a great way to start off my day.  I usually wake up about an hour to 45 minutes before I head out the door to have a drink and a little bit of something to eat.

This morning I had my usual drink of Vega Sport and a piece of toast with PB and banana.  Yum!  No pictures of it though.  First it is to darn early to pull out the camera and Second it is still dark!

Once I got home and showered J and I sat down and had some eggs for breakfast.  Mine was in the form of an egg Mcmuffin. 

IMG_1523 Mmmm…I just love this breakfast sandwich!  Plus I had about a 1/2 cup of fresh strawberries along with it. 

IMG_1528My sandwich consisted of a whole wheat english muffin stuffed with, turkey bacon, cheddar cheese, 1 fried egg and spinach.

IMG_1524 Of course I had my morning cup of coffee!

The rest of my day was again was pretty low key.  Nothing too exciting to talk about.  But for supper tonight I re-instated Pizza night!

Tonight’s pizza was made with ingredients that the hubby requested.  I figured he has endured many of my pizza concoctions for a while now so I threw caution to the wind!  Of course it contained meat!

IMG_1529 I started with my Whole Wheat Flax seed dough.  It is easy as pie to make and better for you.

I mixed it up in my KitchenAid Mixer, kneaded it a little bit into a ball and then let it rise for about 30 minutes or so.  I use quick rise yeast to make it go little faster.

Since it is Friday I poured myself a glass of wine to sip while making pizza! 

IMG_1537This is one of my favourite cheaper wines that I love.  It costs about 15 bucks for the bottle and tastes fantastic.  The hubs liked it too…because he downed this glass while I was busy! :)

IMG_1540 I made a quick whole made sauce in my mini food processor.  I threw in about a 1/2 cup of canned spicy diced tomatoes, 2 tbs of tomato paste, 1 tsp of chopped jarred garlic and then I eye balled the amounts on the oregano, basil, salt and pepper.  I was pretty happy with the way it turned out. 

The pizza toppings were:

IMG_1542 Sautéed mushrooms and onions

IMG_1545 Applewood smoked bacon (I chopped it up and fried in the pan)

IMG_1543 Sliced green olives and chopped green pepper

IMG_1546 Ribbons of sliced hot caprese salami and of course lots of mozzarella cheese!

IMG_1580 20 minutes later it came out looking delicious, golden and bubbling!

IMG_1586 I started with two pieces and a glass of wine.

IMG_1588 I think this was one of my best pizza’s yet!  I think the hubs did too because he had 4 pieces!!  Between the hubs, J and I we ate it all!  I ended up having the last piece…it twas yummy!

Now with a full belly I think I might pour myself another small glass of wine and cozy up and watch a movie!
