Today was another busy day for this Mommy! I had plans to workout this morning before I started my day but my stomach was feeling a little off so I hit the snooze button and got up later instead.
Once I had J up I got our breakfast ready. We had a busy morning ahead of us so I decided a bowl of tummy filling oats was in order.
This bowl was filling. In the mix was:
- 1 cup oats
- 1 cup water
- 1 cup Almond Milk
- 1/2 banana
- Cinnamon
- splash a vanilla
- 1 egg white (mixed in at the end)
Toppings:
- Chocolate PB2
- 1 tsp of Chia seeds
- Blackberries
- Greek yogurt
I also had a cup of Joe and some water to wash down my daily vitamins.
Shortly there after I got all our gear ready and we were out the door to J’s physio appointment. He did very well today and the therapist is VERY happy with his progress. Plus she sent us home with a few new things to do to improve his strength and balance.
When we got home it was time for lunch. I fed J first, I made him a quick turkey sandwich a some watermelon chunks for dessert. He was a hungry little man after working hard in the morning. He ate everything right up!
My lunch was thrown together with what I had in the fridge and it turned out pretty darn tasty!
I made an Ezekiel wrap with leftover chicken breast, tabbloueh, a very ripe avocado and arugula. It was so darn good! I had a side of red pepper strips and two sliced kiwi’s..YUMO!
While I was munching on my lunch I was doing a little planning…
some races! Racing season is coming upon us up in Canada and I am all over it! Every season a local Magazine called Impact does a running issue and lists all the races. So I flipped through and made notes of the ones I would like to do! SO fun!
I pulled up my outlook calendar and got to work.
So far I have signed up for 3:
Mother’s Day Run and Walk – This is a HUGE race here in Calgary that is held every year on Mother’s Day and has about 20,000 participants. This will be my first year doing the 5K race.
Race for Pace – this is a program that we support as we use their services for J.
Street Meet – this is also another program that we support as we use their services for J as well and it is also a good network to meet other family’s that have children with down syndrome. We are doing the 3K Walk as a family.
There are a few more that I would like to do later in the year but I will wait on registering for those right now.
Once I put J down for his afternoon nap I had plans to do my workout that I did not get up to do in the morning. First I had a little cup of Sencha Green Tea to perk me up!
Then I went and cranked out a great interval workout. Before I knew it J was awake and ready for his snack.
We both had smoothies! J just LOVES his smoothies and drinks every last drop!
My big bad green monster. I discovered my Hemp protein in the back of the fridge so I had a scoop of that with some spinach, banana and Almond Milk.
Supper tonight was simple but oh so delicious!
I made the hubs and I a Greek salad, filet of beef and some low and slow sweet potatoes!
The sweet potatoes out of the oven. I was a little disappointed that they got a little more browned that I would have liked but they were still little pillows of oooey gooey goodness! I love cooking them this way they are so good.
The meal itself was wonderful! I even made the Greek dressing from scratch!
I seared the filets first in the pan then I put them in the oven to cook the rest of the way at 350 degrees for about 7 minutes. They turned out great!
I also had a little pour of red wine to sip with my meal.
I went back for seconds on the salad it was so darn tasty plus I just love salty Greek olives!
After I finished supper and cleaned up I had to run to the Post Office to pick up a few packages…I love getting packages!
One of the parcels was J’s summer cloths that I had ordered from Gymboree online.
I just love their cloths. They are cute but they are also very durable and hold up well because J is pretty hard on this cloths. In this pile is 4 t-shirts, one short sleeved button shirt, 2 pairs of shorts, 3 pants, swim shorts and a cute UV shirt to go with them (the frogs). He is going to be stylin’ this year!
Well it is late and I NEED some sleep!
