I had a bit of a late start this morning so breakfast turned into brunch! I was up in the middle of the night last night with a pretty upset tummy and did not end up falling back to sleep for a couple of hours! It sucked! I was so nauseous too!
I got out of bed this morning at 9:30 feeling pretty good!
But before I get to the scrumptious brunch we had this morning I remembered that I forgot to share a little purchase I made from Thursday! HA!
So on Thursday night my husband put together this for me…
I got a wine rack! I have been wanting one like this for a while now and could never find what I was looking for but I managed to finally find it and I love it. Now I can have more than one bottle of wine at a time in the house! Hmmmm…..not sure if that is a good thing or not! My parents got me a gift card for my birthday to stock up so I got 4 bottles to put in it.
So onto brunch! I made this recipe out of the Barefoot Contessa at Home cookbook.
This omelet was sooo good! But not really very healthy. It had bacon, potatoes, onion, eggs, good sharp cheddar, Jalapeno and green onions all cooked in butter of course!. The flavours were very good!
I started by cutting this organic peppered bacon that I got at the farmers market
into small pieces and frying them in the pan.
Mmmmm..the smell of cooking bacon is wonderful.
While that was cooking I cut up the potato, onions, cheddar and jalapeno pepper.
Once the bacon was cooked I removed it from the pan and put it on paper towel so it could drain.
Next into the pan went the pat of butter.

While that was cooking I cracked the five x-large eggs into a bowl and beat them with some milk. Once the potatoes where done cooking I added the diced jalapeno’s to the pan for a few seconds and then went in the bacon, eggs, cheddar and green onions.

It went into the oven for 20 minutes to cook at 350.
This omelet turned out really good. Light and fluffy and so yummy!
I had about a 1/8 of a piece along with one of the Orange Cranberry Scones I made and a Kiwi. I topped my omlete with a piece of tomato. I took my time and ate this slowly savouring every flavour…It was delish! The best part is I have a some leftover and I plan on taking it for lunch tomorrow.
My plans for this afternoon include laundry and cleaning out the shame that is my pantry!
I have to get this organized! I am going to take a stock list and try and make some recipes from what is in there and use it up!
So I will finish this post with some puppy LOVE!!
My little girl Zoei will be 8 years old this Thursday and I have a little something special planned for her this year!
