Shrimp and a Greek Lesson

I took my evening walk and now I am just about ready for bed…but like a good blogger I am here to tell ya what I ate for dinner tonight! :)

Tonight I grabbed my inspiration from The Hungry Yogini. I made Coconut rice with shrimp. I have made this before and it is so good!  It is one of my favourite ways to eat shrimp now.  I made it pretty much the same as Courtney except for I did not add the mango because I did not have any and plus my hubby would not eat it with mango in it anyway!  I usually have to have that on the side.

After I put it in my bowl I added a little avocado and the last of my grape tomatoes…YUM!

I had it with a splash of red wine.

Tonight I also thought I would share how I make my Greek yogurt.  I have had a few friends ask me how I do this so I thought I would share it on the blog.  Just so you know unfortunately us Canadians cannot buy pre-made Greek Yogurt in Canada….OH how I WISH I could but I have to go to the other side of the border to do that.  So I make due by making my own.  It is very simple and makes a wonderful thick yogurt!

I start with a few things…

A bowl, a fine mesh strainer, cheesecloth and my yogurt of choice is Astro Original 0%.  I find that this yogurt gets nice and thick and produces a wonderful result.  I have tried a few different yogurts and this one seems to work the best.

I place the strainer over a bowl that it will rest nicely in without tipping over.  I line the strainer with a few layers of the cheesecloth.

I then dump the entire container of yogurt into the strainer.

Then I pull up the sides, give it a twist and put it in the fridge overnight.

The liquid that is in the yogurt starts draining pretty much immediately!

I save the container from the yogurt so that when it is done draining I put it back in there to store it in the fridge.

So tomorrow you will more than likely see the end result in a bowl topped with blueberries as my morning snack! Heee!  It has been a few days since I have had some since I ran out. 

Remember a little while back when I posted about how excited my husband was that he got the frame to his new bike?  Well today he picked it up from being fully assembled and I think I had told him that I would post a picture of it when it was done ;)     So without further ado here it is…
