Skier Swings

It was a cardio day for me so knowing I could do it later in the day I slept in till 7:30am. It was nice.

BREAKFAST

A bowl of Oatmeal Minus the Oats…YUM.

I topped my bowl with fresh blueberries and some PB2.

Frothy and creamy Americano.

After breakfast I packed up the boys and we took a trip to the Health Food Store. It was a beautiful day to go for a little drive.

I picked up some

Organic Eggs
Kombucha Tea
Kale
and some Probiotics

I was going to get some Kefir but they were all out! So after having a little discussion with the vitamin lady at the store. I decided to give this a try.

It tastes a lot like kefir but it is kind of pricey. I don’t think I would buy this all the time. Kefir is much cheaper.

SNACK

I had some Turkey Jerky Nuggets and a little bowl of watermelon while I was out.

LUNCH

I had leftovers.

Chicken kabobs in a salad wrap. I put a little bruschetta as a topper.

Also the kids passports came. It was lighting fast! Now we are all good to go for Hawaii in October! Smile

I tried a new to me recipe today. I made Jamie Eason’s Turkey Meatloaf Muffins but I used ground Chicken instead of Turkey. You can watch a video of her making them here.

They were supper easy to make and this is a great make-a-head recipe that you can keep in the fridge for grab and go or put in the freezer. OMG! They are delicious!

Chicken Meatloaf Muffins

Ingredients:
2 lbs ground turkey (I used Extra Lean Ground Chicken)
3 egg whites
1 cup of quick cooking oats
1/2 tsp ground cumin
1/2 tsp dried thyme
2 tsp dry yellow mustard
2 tsp black pepper
2 tsp chipotle pepper spice
2 tbsp garlic powder (2 cloves, minced)
2 celery stalks, finely chopped (approx 1 cup)
1 small onion, finely chopped (approx 1 cup)

Directions:

1. Preheat oven to 375 degrees.
2. Spray your muffin tin with Non-stick cooking spray (I used Canola).
3. Mix all the ingredients together in a large bowl.
4. Roll the mixture into balls (about the size of a racquetball) & place them in your muffin tin.
5. Bake for 40 minutes (This may vary depending on your oven. I would suggest using a meat thermometer to ensure your meat is fully cooked. The internal temperature should be 180 degrees)
Makes 12 muffins

Serving size:
Men: 4 muffins
Women: 2 muffins

So good! This meal was awesome!

I also cut up a sweet potato and baked it to have on the side. I enjoyed every bite of this meal. Plus there is lots of leftovers for the rest of the week. I am in for some yummy lunches!

After I cleaned up from supper and the kids were in bed. I finally got a chance to do my workout.

WORKOUT

45/15 Intervals. I almost did not do it but I said it is ONLY 15 Minutes…I Can do anything for 15 minutes…so I did!

Love the move and I can see myself setting goals in increasing my weight over time. Love them!

Then I washed my face and hopped into bed to get some sleep. Up early to do my strength workout in the morning. I have to do it in the morning or I am too tired to do it later!
