Well this post is a day late but….. 

Yup…despite the snow the pulled pork turned out awesome!  We ended up having it for lunch instead of supper since it was ready early. Now if you are not fond of meat..look away.

P1040596 Ready to be pulled apart…now the charred outside is got to be the best part.  They call it the bark and it has a TON of flavour!  We let it rest for about 30 minutes.  As you can see we took a little nibble out of the corner to TEST it out ;)   It was scrumptious!

P1040605 Then we got to work and ripped it to shreds.  We have a ton of leftovers so we vacuumed packed the rest and put in the freezer for later.

P1040607 The hubs made a Carolina style vinegar based sauce called a Vaunted Vinegar Sauce.  It went really well with the pork. 

P1040610 We had our pulled pork on some very fresh Kaiser buns and a little bit of ripple chips on the side.  Now this is not the most healthy lunch but every once in a while as a treat is fine.  It is all about balance.

I must say the hubs did an excellent job for his first shot at making pulled pork.

P1040611 I really enjoyed it.  It was smoky but not too smoky and the meat was tender and very moist and the sauce added a great flavour.  Delish! I must confess I DID have 2nd’s we shared another sandwich! Pulled pork is one of my favourite smoked meats.

I also got cooking this weekend…well dehydrating actually.  I made some Raw Almond Maroons.

IMG_9054 You betcha…I indulged on the paddle!  I always OD on the dough when making these!

I let them dehydrate overnight at about 130 degrees.  I up the temperature so they don’t take as long.

Today I took them out and put them in a container.  The are perfectly crisp on the outside and chewy and gooey in the middle.

P1040623 Then I proceeded to have several of them throughout the day!  ACK!

P1040622 But they are so yummy and very addicting!

Today was another busy day.  I did get up early and get my weight workout done and tomorrow if the rain holds out I will be getting up bright and early for a run with my running buddy!

Supper tonight was fish as we have quite a bit of it in our freezer right now.  I got the recipe from one of my favourite magazines.

I made their Asian-Style Tilapia.

It was quick and easy plus I had all the ingredients on hand.  The sauce has some great flavours in it (pineapple chunks, garlic, toasted sesame oil, ginger and soy sauce)

P1040621 You bake the fish in a parchment paper packet.

P1040625 Before sealing it up you top the filet with the sauce and sprinkle it with green onions and pepper.

P1040624 All sealed up and ready to go into the oven for 15 minutes.

P1040627 It turned out great!  I made brown rice and some zucchini to have along side of the fish.

P1040628 I really liked the Asian flavours and the sweetness of the pineapple.  I would probably make this again.  It tasted great and it was super easy.

After I cleaned up from supper I took the puppers for a short walk and now I think it is time for a little dessert.  I have a very ripe champagne mango calling my name!  I think it will make a great topper for some vanilla frozen yogurt!
