For lunch today I made a grilled Panini sandwich. I wanted some veggies with a little bit of hot gooey cheese and I thought this would do the trick! I was right.
In the sammie I put grilled portobello mushroom, red pepper and spinach with aged white cheddar. It was so good! I also had a kiwi and tried it al’a Kath with the fuzz! It actually tasted just fine to me. Way easier to eat this way too!
This afternoon I decided that I needed to get a hard case for my camera…now that I carry it all the time and throw it into my purse and bags I am always afraid that in a soft case that it might get damaged. So I picked up this little guy today.
It just fits perfect! Love it and now no worries!
When I got back home I gave J a snack a put him down for a little snooze. I continued with my laundry and a few other things like blogging and made a snack!
Which of course included the hummus!
along with that I dipped red pepper, celery, grape tomatoes and some Mary’s “crack”-ers into it..so tasty! This hummus will probably be making a daily appearance since I have a HUGE tub of it and it is so darn good!
I also made myself a green juice…was craving the JUICE!
Supper tonight was simple and summery! Even though it does not really feel much like summer!
Salad rolls!
In these little babies I put: Rice vermicelli noodles, Avocado, Shrimp, Lettuce, carrots and cilantro! Delish! We had a little thinned out Hoisin sauce and Sriracha hot sauce for dipping! This was surprisingly filling I only had 3 and I was good.
Right now I am trying to decide if I would like to run tonight…I may do a quick 2 miles. If not it will be Jillian’s Boost your Metabolism on the agenda for tomorrow morning!
