Finally I am starting to feel like myself again! I am hoping tomorrow I will have enough energy to get up and workout before work. Crossing my fingers!
I know I have not finished my New York trip recap yet but I promise I will get around to it. I have been trying to catch up on things around the house since I was down and out this week.
Last night I was craving some pizza so I looked in the fridge and whipped up a might tasty creation with a Mediterranean feel to it.
First I started with my whole made Whole-wheat and Flaxseed crust.
Super easy to make and so yummy!
I topped it with some pizza sauce I had in the freezer.
Greek Olives, red onion, feta cheese, plum tomatoes, red pepper, peppered goat cheese and chicken.

This pizza turned out fantastic and is probably one of my fav creations so far.
I also tried a new shiraz for sipping.
It was quite good for 10 dollar bottle and went well with my pizza.
After dinner and J was tucked into bed I decided to do a little baking.
I have been experimenting with trying different Chocolate Chip cookie recipes trying to find the perfect one!
This one called for lots of chocolate chunks so I had to give it try. Plus it said the texture had a chewy inside which is my kind of cookie.

Also the best vanilla on the earth bar none. I will never go back to the artificial again. It makes such a difference and is worth every penny of the 12 bones it costs me!
These cookies turned out pretty good and were very good a little warm from the oven!
Cookie tower! I did not eat all these just to let you know. But I did have two for a bedtime snack! This cookie is in the running as a keeper.
Today has been a productive day. Sunday’s are always my days to do laundry, cooking and whatever else needs doing before starting a new week.

While I organized and did pilling up paperwork I snacked on this.
A Honeycrisp apple and almond butter for dipping…delish!
While I was busy I had a repeat of the stew I made a little while ago in the oven roasting away.
This stew is so darn good and makes the house smell amazing!
I can’t wait to dig in…in about 22 minutes!
I also made some Beer-and-Cheese Biscuits. I whipped them up this morning and forgot to take a picture….oops! I have become rusty after not blogging for a few days.
Well supper is just about ready…time to eat!
