Taber Corn and a new gadget

Today was just a busy day and the reason for the very late post…the only post today actually.  I was going to post on my lunch but it was just well crazy!

It felt kind of weird waking up this morning and not be able to do my usual workout.  My body automatically woke up at my usual time but I did not need to get out of bed.  So I did manage to fall back to sleep only to wake up to my alarm…I hate that! It always scares the crap out of me!

For breakfast today I made something quick a lovely green monster

In the blender I put a scoop of Amazing Meal Original, 1/2 cup Almond Breeze, 1/2 cup of water, 1/2 a banana and 2 big handfuls of spinach.

Along with it I had a whole wheat English muffin topped with natural pb and some berry preserves.  So good.  I think I may just repeat this again this week!

When I got to work I was busy from the start and before I knew it I was wanting to take a bit of breather and grab my snack!

Today i brought with me some coconut banana bread from my freezer stash of baking.  It was scrumptious!  I had it with a cup of green tea.

My lunch today was eaten at my desk while still working on some notes!  With trying not to get any of it on my papers or keyboard!  I don’t know about you but does your keyboard get full of crummies?  Mine sure does even though I try to be careful!  Well I guess it just proves I am a hard worker ;)   Thank goodness for the invention of canned air…I use every few days and give my desk a good blast!

So back to my eats…last night I scrounged through the fridge and tried to use up a few leftovers.  So I put together some baked tofu, brown rice and broccoli.

I doused this in Bragg’s Liquid Seasoning (love that stuff) and gobbled it up!  For dessert I had a crispy and sweet nectarine.

My afternoon flew by and before I knew it the day was over at work anyway.  I did not even have a snack in the afternoon.  Sometimes I get busy and forget!  Does that happen to you?  I did manage to drink my weight in water though..I was so thirsty today!

I knew what I was making for supper tonight but I was not sure what I was going to have with it.  But as I was driving home it hit me!  Well I saw the sign and thought that is it!  CORN!  See right now in Alberta it is Taber corn season and they are selling it everywhere. Fresh, sweet and oh so good Taber corn!

So I stopped and picked some up along with some very ripe peaches which I think I will be incorporating into my breakie tomorrow!

I also tried out a new gadget tonight to make my sweet potato chips to go along with supper!

Manoline Slicer 

This handy little mandolin slicer!  LOVE IT!  It worked like a breeze and made lovely little potato chips which I baked in the oven with EVOO, salt, pepper and chipotle seasoning! YUM!

The main attraction of supper was a bbq’d bison burger.  I had it on a whole wheat sandwich thin topped with spinach, avocado and tomato. Simple but delicious!

MMMMMMMM…corn!  This corn was so good! Crisp, sweet and dripping in buttah!  Yes I did say BUTTER…you cannot have corn on the cob with out the buttah!! ;)

After supper we decided it would be nice to go for a little family trip to get ice cream.  But as I was hurrying out the door I left my camera behind…so no pics! :(   But it was so yummy and we all enjoyed it!  I shared a small caramel pecan sundae with J.

When we got back I put J to bed after a few bedtime stories and then took my evening walk.  I went for about 30 minutes.  It was another beautiful night for a walk.  Lots of people in my community were also out enjoying the beautiful evening we were having.

Well I am pooped!  I think I will make my lunch for tomorrow and call it a night!
