The Pyramid

My eyes popped open at exactly 6am this morning…so I popped out of bed and headed down to get my workout done for the day!

This morning was a cardio session.  I did something I have not done in a while.  The Pyramid Intervals video.  I remember when this workout used to KILL me.  Before I could never quite make doing mountain climbers for the full 60 seconds.  But now I can get through it!  No dropping to the knees and no slowing right down.  Plus I feel so much stronger as well.  Don’t get me wrong this workout is still far from easy!


This morning I had a cold breakfast of some of the quinoa I made yesterday.


I took a cup of quinoa and topped it with a very ripe and juicy peach, a few blue berries, walnuts, a big dollop of greek yogurt and a sprinkle of cinnamon.  I moistened the quinoa with a splash of almond milk.


YUM!  I am going to be so sad when all the summer fruit is gone and I am subjected to the apples and oranges of winter!  Don’t get me wrong there are some great fruits in the winter like pomegranates! 

OMG…love those!  But I am still a summer fruit girl all the way!

Ok…got off of the topic a little there…breakfast.

After breakfast the boys and I headed to the Farmers Market.  I had planned to take a few pictures of one of my favourite places but I forgot my camera at home.  I love going to the market on Thursdays because it is so much more quiet and calmer without hoards of people and it makes it easier to navigate the already tight isles with the boys in tow.

But I did snap a picture of what I got when I unpacked it all.

Organic Chicken Sausage
Organic Chicken Wieners
Tomato & Feta Pasta Sauce
Fresh pasta
Fresh baked 100% Whole Wheat bread (that smelled a-maz-ing!)
Aged Gouda Cheese


The fresh pasta and sauce was purchased for supper tonight…more on that later.


When we got home and I put everything away I fed the boys their lunch and they I made mine which incorporated this turkey burger I bought at the market.


I was not sure what I was going to use for a protein with my planned salad and I saw this and had to try it.  It was an Organic Turkey burger with blueberries, fennel and caramelized onions and boy was it good!


I am not a real fan of fennel but it sure was good in this turkey burger.


I put the burger on the leftover veggies from the night before and added some grape tomatoes and a few slices of cucumber.  I also had a side of sweet potato wedges also leftovers and a new brand of Kombucha tea that I picked up at the health foods store a few days ago.


This one is made in Canada and was peached flavoured.  It was pretty good.

After I put Zaxari down for a nap I got busy and finished writing my letters to Jaxin’s new Kindergarten teacher.  I put together the Biography and a more formal letter about Jaxin for her and the school.  I have a meeting with her tomorrow afternoon and I want to be prepared.


I worked away on this for as long as I could while Zaxari slept and Jaxin watched a little TV.  I was on a roll.  Then the hubby came home and shortly afterwards I had to quit for a bit and make supper.  I was just about finished when he got home so I finished it up after supper and printed everything out.  It is all ready for tomorrow.  I want to give as much information to the school about Jaxin as I can so they will know what to expect from him.  I want him to have a happy and successful year.


Was so good!  I was craving pasta so when I was at the market I went to one of my favourite vendors and picked up some of their homemade sauce and fresh pasta.


This sauce is yummy….but I added to it a little like I always do.


I sautéed some crimini mushrooms and also added some chopped fresh spinach.


Topped with a little fresh Parmesan Reggiano and a small piece of garlic toast!  One of my favourite meals.  I LOVE fresh pasta it tastes so much better than the dried stuff.

I also had a small splash of red wine.


I tried this new one from my wine rack called Freud’s Ego by Therapy Vineyards.  It is a red blend.  it was ok…but not my favourite.

A little while after supper we had a little treat.


At the market I picked up a couple of small personal sized cheesecakes for dessert.  I have been craving cheesecake for a while now and I saved my craving for our indulgent supper tonight. 


My cheesecake was lemon flavoured with fresh berries on top…so good!  I enjoyed every single bite!  It was the perfect size…not too big and not too small.

Ok, time to call it a day.  I have been on the computer FAR to long and my butt is starting to go numb!  Time to go-to-BED!
