The Weekend

So weekend as usual has been a busy one.  We have been blessed with unbelievable weather!  It does not feel like Fall at all!  Yesterday was a sun shiny 27 degrees and today again was 25 degrees.  The trees and plants think it is Fall…lots of leaves falling to the ground and everything turning yellow as it does here in Calgary.

SATURDAY

There was no workout for me today I scheduled it as a REST day today.  I was going to be out in the morning and part of the afternoon for a Cancer Benefit and I knew there probably would not be time to fit it in. 

Since I knew that my lunch was going to be larger than normal today I made a light breakfast of a green smoothie.

Then at around 10am I left for my Benefit.  It is one that I go to every year with a friend of mine.  It has become a bit of a tradition actually! Smile

It is called Fashion with Compassion and is a fundraiser for Breast Cancer Supportive Care Program here in Calgary.  A very good cause.  They put on a lovely afternoon of a awesome sit down lunch and fashion show.  There is also Live and Silent Auctions along with raffle prizes!  You can also buy tickets for Grand Prize draw to go on some pretty awesome trips. Lots to do and so much fun to help a great cause.

Lunch this year was very good.

I sounds like a lot of food but actually it was just right..plus we had to wait a little between each course.  There was also wine.  I had a small glass of red with my meal.

The fundraiser went very well and they raised more this year than any year just over $130,000.00!!  Yayyyy…for all the hard work that they put into this day every year!

Once the benefit was over I had to hurry home so Devin could take Jaxin to see Toopy and Binoo.

Unfortunately It freaked Jaxin out a little and my husband decided to leave during the first intermission.  Oh well…I thought he would have fun going….but I guess not!  Jaxin is a little funny about stuff like this sometimes.

While they were out doing that.  I took Zaxari for a long walk since it was such a beautiful day.  He loves going for walks so he was pretty happy and actually took a little nap.  Since I did not want to wake him up when we got home I just sat on the step and let him sleep while I waited for the hubby to come home.

SUPPER

Zucchini Coconut Flour Pancakes
(inspired by Balanced Bites)

Ingredients

Makes 3 medium sized cakes

  • 1 tbsp coconut flour
  • 3 eggs or 9 tbsp egg whites
  • 2 cups shredded zucchini (using a food processor with a shredding disc or cheese grater, keep skin on)
  • coconut oil to pan-fry in (amount will vary)
  • salt and pepper to taste
Prep

Sift the coconut flour into the eggs with the baking powder and beat them together. (Coconut flour often has clumps, which is why we want to sift it.)

Strain the liquid out of the zucchini by squeezing it with a cheese cloth or paper towel
Stir everything together.

Use a large cast iron skillet over medium-low heat with coconut oil grease coating the pan.

Spoon the mixture into the pan in desired sized “cakes.” I made mine pretty large at roughly 4-6″ in diameter and cooked them one at a time but you can also make smaller ones and load up a pan with 3-4 at a time.

Serve warm or at room temperature or on-the-go. Yum.

They turned out perfect!  I topped mine with salsa and a big dollop of greek yogurt!

A little later on in the evening while the hubby and I were watching some TV I had some of Dani’s Caramel Popcorn.

OMG…so good! and so easy to make.

SUNDAY

Today I got to sleep in….so nice!  I got up around 9am and had some breakfast.

Two pieces of sprouted grain bread toasted and topped with 1/4 of an avocado as a spread and then two runny drippy eggs placed on top.  YUM!  Love this kind of meal!  Breakfast is my favourite meal of the day!

Of course I had my one cup of coffee!

My morning was spent doing laundry, meal planning for the week and getting my cardio workout done.

WORKOUT = INTERVALS

Today I did 30/30 – Kettlebell Swing/Mountain Climber with the curtsy lunge as my low.  It was a good workout and I was out of breath by time I was done.  But I felt great!

Afterwards I made myself a little Fall inspired smoothie.

It turned like pumpkin pie in a glass…seriously!

In the afternoon I made myself decent and took my shopping list and hit the grocery store.  I managed to get everything and get out in an hour.  The store was busy!

Sunday – Bacon Wrapped Smoky Chicken Breast and sauteed veggies
Monday – Grilled Pork Tenderloin
Tuesday – Pecan Encrusted Tilapia with Orange Salsa
Wednesday – Baked Turkey Meatballs with Quinoa Pasta
Thursday – Tuna, Bean and Artichoke Salad on greens
Friday – Pizza night!
Saturday – Grilled Shrimp with 5-Grain Blend Salad

SUPPER

Tonight was Bacon Wrapped Smoky Chicken.

Chicken breasts rubbed with a smoky seasoning and then wrapped in bacon a little more seasoning added and then bbq’d to perfection by the hubby!

The side; sautéed broccoli, red peppers and zucchini.

This supper was so good!  Loved the smoky seasoning on the chicken breasts!

 

My day has been very long and I need to get to bed…so no wrap up tonight.
