TT12–Day 2 AB Challenge

Hello to DAY 2! This morning I took my lovely mid section pictures.  Believe it or not I am going to post them for all to see!

So I am calling this Day 1 for me.

I got up early with the hubby and did my Workout.

BREAKFAST

Egg white veggie muffins x 4, dry Ezekiel raisin toast and some very yummy cherries

My day was actually pretty boring today.  I had no plans to go anywhere so the boys and I just hung out at home.  I did a few things around the house…more laundry and some organizing.  I kind of like days like this…way less stressful!

SNACK

I had a Bio-K and a Protein ball along with another coffee.

Once Zax went down for his nap I had a nice hot shower.  It was lovely.  The weather was much cooler here today and I was feeling it.

LUNCH

I took my time today and created a yummy salad!

Last of the mixed greens topped with:

Tuna
Chickpeas
red pepper
last two boccaccini balls
celery
and a couple artichoke hearts

This salad was so darn yummy!  Loved it!  Good thing I had something cold for lunch because Zaxari woke up and it had to wait until I got him a bottle and his meal before I could dig in!  Kiddos always come first!

In the afternoon I did a little baking!  If you follow me on instagram you would have seen this picture.

super charge me cookies

These are by far my favourite cookie!  The best thing is they are healthy.. well except for the dark chocolate chips if you want to get technical!  I could kiss Dreena Burton’s feet for coming up with this awesome recipe!  They are my go to cookie!

SUPER-CHARGE ME! COOKIES

1 cup rolled oats or quick oats
2/3 cup spelt flour
1/4 tsp (rounded) sea salt
1/4 – 1/2 tsp cinnamon
1/8 cup unsweetened shredded coconut
1/4 –1/3 cup raisins or chopped dried fruit
3–4 tbsp carob or chocolate chips (optional; or use more dried fruit, nuts, or seeds)
1 tsp baking powder
1/3 cup flax meal (not flax seed)
1/2 cup pure maple syrup
3 tbsp almond butter (may use cashew, peanut, hemp seed butter)
1 1/2 tsp pure vanilla extract
2 tbsp canola oil

Preheat oven to 350°F (180°C). In a bowl, combine oats, flour, salt, cinnamon, coconut, raisins, and carob or chocolate chips, sift in baking powder, and stir until well combined. In a separate bowl, combine flax meal, syrup, almond butter, and vanilla and stir until well combined. Stir in oil. Add wet mixture to dry, and stir until just well combined (do not overmix). Line a baking sheet with parchment paper. Spoon batter onto baking sheet evenly space apart, and lightly flatten. Bake for 13 minutes (no longer, or they will dry out). Remove from oven and let cool on baking sheet for 1 minute (no longer), then transfer to a cooling rack.

Makes 11-12 cookies.

Best EVER cookie…you MUST try them!

Salmon Salad

Maple Glazed Salmon done under the broiler…sooooo Good! I put it on top of a bed of spinach with peppered goat cheese, red pepper, red onion and some pieces of leftover roasted sweet potato.  HEAVEN!

This my favourite way to eat Salmon…love it!

I glazed my Salmon with a mix of maple syrup, grainy mustard, soy sauce and fresh crushed garlic.

and YES I did have a cookie for dessert!  YUMMO!  How many times can I say YUM in my post today! HA!

Night all!  Early morning cardio is in my future!  Have to work those abs….
