Week 7 – Day 43

I try to be strong and disciplined to my program everyday!  Some days are harder than others that is for sure!  When I have a bad day I have discovered that I can be a little bit of an emotional eater.  I grab for a few squares of dark chocolate usually…since that is really the only thing I want or munch on a few extra nuts.  I hate that I do that but it is what it is and I go on.  I don’t dwell on it and say well I ate a few pieces of chocolate so maybe I should just eat the whole bar…a few pieces usually fends off the craving or whatever it is that I am experiencing at the time.

So I am on Week 7: Day 43 of my new program and training towards my competition.  My competition is 116 days out.  I will be 16 weeks away this Saturday!!  ACK…I also have to put that on my coach’s radar.  OMG!

One thing about being on a journey such as this….is that…

IT IS!!  Working out hard and eating CLEAN really is key to results and I have been seeing them!

I took this picture yesterday.  I have been so happy with my results so far and really happy with my abs!  They are starting to peek through!  ACK!  I have had two kids so this is huge for me since I have been a little pudgy in this area for quite awhile!

Also my triceps have decided to come out to play!  I was beyond thrilled with this!  That is one muscle I have always had a hard time developing! Eeeeeee!

When I see results like this it is what powers me through my very early morning workouts!  When I don’t want to get out of bed at 5am I remember what I am achieving when I do and that usually puts a fire in me to get up! 

My next check-in is on March 8th.  This will be a photo check-in so I will post some before and where I am at now pictures when I get that together.

I really wanted to post more about what I have been up to lately but I have been so darn busy!  When the evening comes and the boys are in bed I want to be in bed myself!  So tired!  Sleep is so important for me in order to keep up with my workouts and do them with intensity and in order to that I need to sleep or the workouts suffer.  I have found that out the hard way!  It is not pretty!

Meals

Here are some of my tasty eats over that last week or so:

Pumpkin Protein Pancakes! Delish!

7 egg whites
35g oats
1/3 cup pumpkin
1 tsp of pumpkin pie spice
cinnamon to taste (I like lots)

Blend it up!  It makes about 3 pancakes.  I top mine with coconut butter, SF Syrup and walnuts or 1/2 a banana also greek yogurt is good too!

Yummy Egg pizza of sorts! Ezekiel wrap topped with: tomato paste, spinach, red onion, light feta stuck in the oven to cook.  Then topped with two sunny side up eggs and avocado!  YUM!

Steel cut oats made the easy way in the Rice cooker!  Perfect every time…then portioned out and put in the fridge for my early morning pre-workout meal.

One of my favs ground turkey, whole wheat pasta, tomato sauce with spinach or kale and topped with a little skim milk cheese!  Sometimes I add mushrooms too.

A snack that tastes like a treat – 1/2 Ezekiel English Muffin topped with PB and All Fruit Jam…holy good!  Carrots on the side.

My latest obsession!  Avocados…love them!  Healthy fat, good for you and they go with anything!

Also still have my DavidsTea obsession!  Red Velvet Cake…current favourite! LOVE!

Workouts

I got my new workout plan for February and it is great!  Totally changed up, new and amazing and challenging!  Awesome!

Cardio – Hills on the Treadmill switched up for this month and biking videos with the hubby on the computrainer!  Killer workouts…Big sweat fest every time!

I also try to get outside now that we are getting some nice days for a walk and I have taken a couple of Hot Yoga classes on Sundays.  I really want to do some more.  Hot yoga is such a great stretch!

Free Meal

My Free Meal last week I decided to cook at home.  I was craving something cheesy…so I made a cheesy gnocchi gratin!

I went to the local Italian market to pick up the ingredients.

It had a creamy sauce made with mascarpone and parmesan cheeses and then baked in the oven.  YUM!  Of course I had to get some green in there! Yummy green beans!

We also had some focaccia bread with amazing aged balsamic vinegar and fruity olive oil. Delish! 

Even though this meal was pretty rich I felt fine afterwards.  I did not over do it and just took my time to eat it.  No snarffing it down was involved. HA!

This week I think I have a hankering for pizza…..mmmmm!

Time to call it a night!  I think I might dream of my favourite pizza now….
