I had a pretty busy day today and now I am pooped! But I will give a quick run down of my exercise and eating for today.
I got up at my usual time of 6:00 am and had my hot cup of lemon water and made a green smoothie for me and a protein smoothie for the hubby.
In my blender this morning was steamed kale, 1 cup unsweetened almond milk, 1/2 banana, 1/3 cup frozen blueberries, 1 scoop of Vega and ice.
I use Vega for my morning green smoothies. I love this brand because it is all natural and makes me feel great. I use the berry flavour and it tastes good. Which is a plus when it comes to this kind of stuff.

Since I had a busy day ahead of me the only time I would have to do my Interval workout was in the morning. So I pulled myself together and got it done. My intervals today was skipping rope and kettle bell swings. It woke me up that is for sure.
By 8:30 am my tummy was growling again. I was showered and dressed and ready to get on with my day. J was up now too. So we had breakfast together.

Breakfast is his favourite meal…he loves it!
My breakfast was two farm fresh eggs basted, 4 very large sections of grapefruit and a piece of Ezekiel bread topped with a little cherry jam.
Washed down with green tea and water.
Since I was going to be out for most of the day I packed my snacks and my lunch.
Planning out my menu for the week really helps me to be organized. I knew that by looking at it the night before I had to make sure to prepare my food for the following day so I could pack it up.
In my bag was:
Morning snack: cottage cheese, walnuts and blueberries
Lunch: homemade turkey chilli (from the freezer) along with carrot sticks and pepper strips
Afternoon snack: A Simply Bar (this was the first time I had tried it….not bad but not great either. I think I will stick to Larabars or make my own)
Water: I also got in my fair share of water today about 80 oz! I was a thirsty girl!
I was going to take pictures of my snack and lunch but eating on the run…I forgot! I guess that is what happens when you are busy! No time to think about the camera. Ooops!
I did however take a picture of my afternoon snack….
and yes that would be a Starbucks cup that it is propped up against. I had a much needed coffee this afternoon since I was just wiped out today! I could not STOP yawing this afternoon!
Supper tonight was yummy! We had my favourite shrimp pasta.
I have developed this recipe over time and now I think I have got it how I like it. It is a really quick supper but to me tastes almost gourmet!
Shrimp Bruschetta Pasta
15 – 20 large raw shrimp
1 jar of Classico Brushcetta
8 Kalamata Olives pitted and halved
2 handfuls of spinach chopped
1 oz goat cheese
2 cups dried kamut penne pasta
Prepare the pasta as per the directions on the box. Then warm up the bruschetta in a pan. I use the whole jar since it is small. Once it comes to a slight simmer I throw in the shrimp the shrimp do not take very long. Once the shrimp are almost done stir in the olives and the goat cheese. Once the cheese is all melted put in the spinach to wilt down. Once the sauce is done I add the cooked penne and mix it all up.
This tastes so good! The whole family loves it. The olives and cheese make this dish delicious! We always sprinkle it with freshly grated parmesan cheese as well!
Tomorrow is another busy day again for me. I am the parent helper in J’s class in the morning. That also means I bring the snack. I currently have a banana bread baking in the oven to take for the kiddos tomorrow. I hope that they like it.
Well time to have a look and my Menu Plan for tomorrow and assess if there is anything I need to get prepped.
